Far Yeast Brewing collaborates with Ise Kadoya Beer to brew unprecedented soy sauce barrel-aged beer. Off Trail #19 Shoyu the Way to be released on Thursday, December 23

 Craft beer brewery Far Yeast Brewing Co., Ltd. (Headquarters: Kosuge Village, Yamanashi Prefecture, Representative Director: Shiro Yamada) that has been introducing beers full of originality from Japan to the world had a collaboration with Ise Kadoya Brewery.  As the collaboration product, Far Yeast Brewing will release the Off Trail #19, “Shoyu the Way” a beer aged in wooden soy sauce barrels, in collaboration with Ise Kadoya Brewery, which is produced and sold by Niken Chaya Mochi Kadoya Honten Co., Ltd.(Head office: Ise City, Mie Prefecture; President: Narimune Suzuki), on Thursday, December 23, 2021.

■Collaboration with Ise Kakuya Brewery, which has been in business since 1923 and has a tradition of making soy sauce

 

 “Off Trail” started in November 2019 as the third brand following “Kawa KAGUA” and “Far Yeast”. Utilizing microorganisms other than brewer’s yeast, we use a barrel-aging method that matures in wooden barrels to create a unique beer with a rich and complex taste. “Off Trail # 19 Shoyu the Way”, which will be released as a new work of “Off Trail”, is a barrel-aged beer that has been aged in barrels brewed with soy sauce that is unprecedented in the past. This new attempt was realized by taking over the traditional wooden soy sauce barrel used for soy sauce preparation from Ise Kadoya Brewery, which has had a history of brewing miso soy sauce since 1918. So far, we have made various barrel-aged beers using wine barrels and whiskey barrels, but aging using soy sauce barrels is our first attempt. It was an adventurous beer experiment as if pushing yourself a way through the trackless mountain, Off Trail.

■A unique “soy sauce barrel-aged beer” full of “umami” flavor.

 When the spiced sour porter was aged in soy sauce barrels, it produced a beer with the most robust added flavor we have ever tasted, as fast as 38 days after being placed in the barrel. After that, a balanced blending of sour red ale and barrel-aged porter resulted in a beer that smells like freshly cut cedarwood and cabernet sauvignon. The aroma is reminiscent of dashi, soy sauce, and dark malt were followed. In addition, a hint of acidity, mild earthiness, a touch of bourbon, and a hint of vanilla appear, leading to a smooth and pleasant finish. The tannins from the wood barrels bring balance to the acidity and flavor of the beer. As a result, we created in a uniquely elegant and mysterious beer full of “umami.”

In January 2021, we will open the beer pairing event “Shoyu the Way” at both companies’ directly managed restaurant bars in Tokyo.

At Ise Kadoya Beer Yaesu in Yaesu Tokyo, the event will be on Saturday, January 8, 2021.

The event will be held in mid-January at our Far Yeast Tokyo Brewery & Grill in Gotanda, Tokyo. 

At both locations, Mr. Deguchi, the brewmaster of Ise Kadoya brewery, and Mr. Yanai, our head brewer, will hold a talk session to enjoy craft beer with beer fans. (Detail information will be announced on each company’s official SNS)

The company was founded in 1575 next to a boat landing for Ise Jingu, one of the three major shrines in Japan, as a rice cake shop called Nikenjaya Mochi, which catered to worshippers.  About Off Trail

“Off Trail” is a new brand following our two brands, “Far Yeast” and “KAGUA.” The name “Off Trail” is inspired by our aim to express the local terroir of Kosuge-mura, Yamanashi, and Japan at large, coupled with our challenge to innovate and experiment with every batch to discover new recipes and chart undiscovered territory in brewing. 

To generate rich and complex flavors by utilizing microorganisms other than beer yeast, we brew beer using the barrel-aging method, where beer is aged in barrels used for wine, sake, and whiskey. (Headquarters: Kosuge Village, Yamanashi Prefecture, Representative Director: Shiro Yamada) introduces beers full of originality from Japan to the world, which will release a special limited brew “Far Yeast Hop Frontier -New World IPA-” on Friday, December 17th. It is a beer with a powerful tropical flavor that uses hops from Oceania, which has been attracting attention in recent years. The original series of this limited brew product was “Far Yeast Hop Frontier -Juicy IPA-” (hereafter “Hop Frontier”), joined in our line-up as a new standard product since July 2021. 

■ Hop Frontier: Maximize the hop aroma by a scientific approach

Hop Frontier, which was one of the first beers in Japan to incorporate the latest hop theory and advanced brewing methods, was created using a scientific approach to maximize the aroma components of hops, and the first batch was released in March 2021. Four months later, it became Far Yeast Brewing’s new regular beer, and we began brewing it year-round. This Juicy IPA is full of fruity and tropical aromas.

 Recent research into hop aroma compounds has led to a focus on “Survivables”, compounds that can remain as aromas in the finished beer product even after the whole brewing process. They are compounds with low sensory thresholds and are relatively difficult to volatilize. “Survivables” are compounds with low sensory thresholds and relatively low volatility, such as monoterpene alcohols, hop-derived esters, and thiols, which remain strong in the final beer product even after the brewing process, and are said to achieve high aromatic impact. Hop Frontier is a brewing method that effectively extracts these aromatic components and has taken on the challenge of maximizing a variety of aromatic ingredients that have been considered difficult to achieve in the past.


■”New World IPA”, a style that has been gaining attention

In February 2021, a new beer style called ” New Zealand Style India Pale Ale” was added to the beer style guidelines set by the U.S. Brewers Association. Recently, IPAs brewed with Australian and New Zealand hops are called “New World IPA “*1 and have recently attracted attention. Hop Frontier is brewed with the new hop product called CRYO POP™*2 as base hops, developed by Yakima Chief Hops®, using four varieties of hops, after several years of researching “Survivables.” The Far Yeast Hop Frontier -New World IPA- uses the same CRYO POP™ as Hop Frontier. Additionally, it uses New Zealand hops such as “Pacific Sunrise” and “Nelson Sauvin” and Australian hops “Vic Secret.”  While retaining the strong monoterpene aroma that Hop Frontier produces, the tropical flavors of pineapple, orange, and other Oceania hops are extracted to the maximum extent possible for a gorgeous finish.

※1 What is New World IPA?
New World IPA is a style that uses hops from Australia and New Zealand. With the recent popularity of hop-forward beers, this style is gaining attention as a derivative of IPA. It was defined as “New Zealand-style India Pale Ale” in 2021 by the Beer Style Guidelines of the Brewers Association in the United States. It is characterized by an intense tropical fruity and grassy aroma flavor and bitterness that brings out the character of Oceania hops.

※2 What is CRYO POP™?
CRYO POP™ is the new trade name for TRI-2304CR, a hop product developed by Yakima Chief Hops® after several years of research into “Survivables.” Far Yeast Brewing is the first brewery in Japan to use this hop product in its products. TRI-2304CR maximizes this hop product’s solubility (ease of dissolving into liquids), allowing the beer to retain its fruity, ripe, and juicy aroma.

It will be on sale to the general public on Thursday, December 9.

 The “NIGHT WATCH PROJECT” is launched at the end of 2019 by a group of professionals in various fields who love craft beer, including brewers, fashion, graphic and architectural designers.

 The seventh Night Watch Project is “Night Watch Project Merry Christmas Belgian Hazy IPA” and “Night Watch Project Strawberry Chocolate Cake Belgian Hazy IPA.” Like its previous version, it is based on Milkshake IPA*, which has a tender mouthfeel and a sweet taste of lactose.

We have increased the amount of lactose in the beer to make it sweeter than previous versions, making it stand out more than spice, chocolate.

For the hops, we used idaho7, which has fruity aromas, and CRYO POP™, a blend of hops developed to be ideal for Hazy IPA, on the hot side.

We emphasized tropical, citrus, and stone fruit aromas for a juicy taste.

We used Belgian yeast for the first time in this series, which gives the beer a sweet, melon-like ester aroma.

Milkshake IPA is an IPA-based beer with lactose (milk sugar) added; it has the bitterness and sweetness of an IPA and a creamy mouthfeel with aromas of tropical fruits and vanilla.

Christmas beer has a high alcohol content to warm up the body during the cold winter months, and various spices are added to keep it preserved for a long time. When you crack open the beer, you can immediately feel the spicy-sweet aroma of cinnamon. On the palate, the cardamom, lemon-like aroma, and spicy cloves are perfectly balanced with the sweetness of the base beer, making it refreshing. ■Further evolved first brand “Ginspiration” 

Off Trail Ginspiration 2021, like the first Ginspiration, is brewed with juniper berries used to make gin. This time, we have also added goldenseal and fennel to the botanicals to make it taste more like gin. Our standard beer, Far Yeast Tokyo IPA, was aged for six months in the same barrels used for red wine and gin, and then juniper berries, Chinese fragrant olive, and fennel were added to accentuate the robust bitterness of the beer further.

The aroma of spicy herbs, licorice, tannins from peach blossom barrels, and bitter hops are wrapped up in a light body and mild carbonation, resulting in a barrel-aged IPA with a sophisticated and complex flavor.

The “Off Trail Ginspiration 2021” will go on sale nationwide on Saturday, November 13, and the official online store will start pre-order reservations from 1:00 p.m. on Tuesday, November 9.
