The sixth edition of the Yamanashi Support Project, using beers to liven up Yamanashi. Far Yeast Peach Haze, with the aroma of freshly picked peaches, will be available for pre-order on August 17 (Tue).

Far Yeast Brewing that has been introducing beers full of originality from Japan to the world, will brew a limited edition, Far Yeast Peach Haze using peaches from the peach farm “Peach Senka Yamashita” (Yamanashi City, Yamanashi Prefecture) in Yamanashi City, Yamanashi Prefecture, as the sixth edition of its “Yamanashi Support Project” to cheer up Yamanashi with beer. The beer will go on sale to the general public on Friday, August 27, 2021, and will be available for pre-order on the online store from 13:00 on Tuesday, August 17.

■Peach Haze,” which sold out last year very quickly, is back again!

The Yamanashi Support Project was launched in July 2020 with the aim of revitalizing local industries through the brewing of beer using products harvested in Yamanashi prefecture. In October, the company moved its headquarters from Shibuya to Kosuge Village in Yamanashi Prefecture, where the brewery is located, and has further strengthened its ties with producers and businesses in the prefecture. Far Yeast Brewing has released five beers as Yamanashi Support Project so far, including “Ume-kin’ Me Crazy!” using Ume harvested in Kosuge village, “GRAPEVINE” using grapes harvested in Nirasaki city, and “Omoiro Tomato Ale” using tomatoes harvested in Hokuto city.  Peach Haze is the sixth release in the series.

We brew Far Yeast Peach Haze as the sixth beer in the project. Far Yeast Peach Haze was brewed last year as the first edition in this project. Last year, Peach Haze was sold out immediately after pre-ordering open,so we had to rush out an additional brew. 

■Peach Senka Yamashita’s peaches are used in abundance. 

Following last year’s “Peach Haze” and the “Peach Flower Weiß” released in May this year, we are using peaches from “Peach Senka Yamashita”, a peach farmer who runs the popular cafe “Peach Farmer Cafe La Pesca” in Yamanashi City. We’re using peaches which cannot be sold on the market because of the difficulty in appearance. 

The farm of “Peach Senka Yamashita” is located on the southern slope overlooking the Kofu Basin, in a perfect environment where it receives plenty of sunshine. This year, we used the Hakuho variety, which is representative of Yamanashi. It is a popular variety characterized by its low fiber content and freshness with plenty of juice.

The introduction of a press that can squeeze the juice out of the peaches has improved our work efficiency, and we were able to prepare two batches at once using a total of 1000 kg of peaches.

■The evolved recipe makes it possible to enjoy the texture of freshly picked peaches even more. 

Far Yeast Peach Haze is a Hazy-style fruit pale ale made with an abundance of freshly picked peaches. The aroma of the peaches is enhanced by the use of two types of hops: El Dorado, which has a stone fruit aroma, and Mosaic, which has a tropical aroma.

Last year, we froze the harvested peaches once to destroy the fibers before pureeing them, but this year, we processed the freshly picked peaches directly into juice because they are a low-fiber variety. The juice was added twice, once during brewing and once at the end of fermentation, so that the peaches would be well integrated into the beer and the juiciness and thick mouthfeel of the fresh peaches, as well as the natural peach aroma, would be maximized. We used less oats than last year, which are often used in Hazy IPA to thicken and cloud the beer, so you can enjoy the natural mouthfeel of the peaches more.

When chilled, it has a refreshing peach cider-like flavor, and as the temperature rises, the aroma opens up and the sweet aroma spreads.

Far Yeast Peach Haze will go on sale to the general public on Friday, August 27th, and our online store will start accepting pre-orders from 13:00 on Tuesday, August 17th.

We will continue to collaborate with producers and businesses in Yamanashi Prefecture to bring you a variety of “Made in Yamanashi” beers.

Far Yeast Brewing Co., Ltd. will release Off Trail Hops and Dreams, the fifteenth beer from its innovative Off Trail brand, to the market on Friday, August 27th, with pre-orders available on the official online store from 1pm on Tuesday, August 10th.

Off Trail Hops and Dreams is a Dry Hopped Barrel Aged Sour Blonde Ale made by dry hopping a barrel-aged blonde sour ale with a new experimental hop called HBC630.

This new, as yet unnamed hop, HBC630, provides a complex, fruity aroma with distinctive raspberry and cherry notes not found in hops of the past.

This is the third Dry-Hopped sour in the Off Trail project, following “Traverse” in collaboration with West Coast Brewing and “Event Horizon” in collaboration with Uchu Brewing. 

We challenged creating a fruity flavor without using natural fruit, with just the power of barrel-aged beer and hops.

When poured into a glass, it has a sweet aroma of candy-like esters, freshly picked peaches, and bananas, and when sipped, the tropical lychee and apple cider flavors from the base beer burst in the mouth. Hop aromas reminiscent of raspberries and cherries invite the drinker into a dream world. This new hop aroma experience is a must-try. Off Trail Hops and Dreams will go on sale nationwide on Friday, August 27th, and the online store will start pre-order reservations at 13:00 on Tuesday, July 20th (shipping will begin on or after Friday, August 20th).

Full of tropical flavors “Passion Haze”, brewed with used pesticide-free, off-spec passion fruit from Okinawa. Limited release from August 6 (Fri.)

Craft beer maker Far Yeast Brewing Co., Ltd. (Headquarters: Kosuge Village, Yamanashi Prefecture, Representative Director: Shiro Yamada) that has been introducing beers full of originality from Japan to the world, will release “Passion Haze”, a limited-edition beer made from pesticide-free passion fruit grown in Okinawa Prefecture, on Friday, August 6.

“Passion Haze” is a Hazy IPA*1 with passion fruit aromas and tropical fruits such as pineapple, mango, and coconut, as well as citrus flavors. The tropical aroma is complemented by the tartness of the passion fruit for a refreshing aftertaste.

*1 What is a Hazy IPA?  Hazy IPA is a style defined as “Juicy or Hazy India Pale Ale” in the Beer Style Guidelines by the U.S. Brewers Association. As the style name suggests, it focuses on bringing out the “juicy flavors” of the hops and is characterized by a cloudy appearance. Although it is a new beer style defined in 2018, it is popular among craft beer fans and is one of today’s most notable styles. 

“Passion Haze” was born out of a connection with Akemi Chinen of Akemi Farm, which takes pesticide-free cultivation seriously and farming passion fruit in Okinawa. In response to Ms. Chinen’s wish “through craft beer as an opportunity to introduce the passion fruit to people in Japan,”  we came up with an idea to brew a beer with passion fruit.  And, we aimed to convey the charm of the passion fruit with its gorgeous aroma and sweet-sour taste.

The passion fruits we used were delivered directly from the farm to our brewery, and after that, we carefully processed them all by hand and used plenty of them for brewing. With the tropical and juicy aroma in mind, we used three hops, Citra, Azacca, and Sabro, to create a Hazy IPA with the rich tropical aroma and sour taste of passion fruit.

Our head office and brewery are located in Kosuge Village, Yamanashi Prefecture, well known as one of the largest Fruit-Producing prefectures in Japan. We are now focusing on brewing fruit beer. With respect to terroir, we are now putting effort into using fruits for our beer brewing.  Under the “Yamanashi Support Project” launched in 2020, we are brewing beer using fruits from Yamanashi Prefecture, such as peaches and grapes. Off Trail, a brand that uses a barrel-aging method to brew beer using microorganisms other than ordinary beer yeast, also produces beers with unique flavors blended with seasonal fruits such as mango, plum, and persimmon. We plan to continue delivering a variety of fruit beers that take advantage of regional characteristics.

About Akemi Farm

Akemi Farm is run by Ms. Akemi Chinen in Yaese-cho, Okinawa Prefecture. Akemi moved to Okinawa at the same time as her marriage, and she took it as a chance to start a vegetable farming business. She started outdoor cultivation with fewer pesticides because she wanted to feed her children safe and secure food.  When she was looking for farm products that could be grown pesticide-free, she came across passion fruit pesticide-free cultivation in the prefecture. She decided to do it since she was looking for something unique to Okinawa and has been growing passion fruit in greenhouses without pesticides since 2018.

She has been producing passion fruit in greenhouses without pesticides since 2018, using organic fertilizers and enzymes, and taking measures against pests and crop diseases by hand.

Far Yeast Brewing Co., Ltd. will release Off Trail Cyclocross Mocha IPA to the general public on Thursday, July 29th, the official online as the 14th Off Trail, which has a brand concept of challenging innovative beer brewing. Pre-order sales will start at 13:00 on July 20th (Tuesday) at the store.

In November of 2019, we welcomed “Off Trail” into our brand portfolio as our third brand alongside “Far Yeast” and “KAGUA”. The name “Off Trail” is inspired by our aim to innovate and experiment with every batch to discover new recipes and chart undiscovered territory in brewing. These unique brews often contain region-specific specialties or seasonal fruits such as grapes and peaches and are aged in wood barrels that were previously used for wine, sake, or whiskey. 

The 14th edition of Off Trail Cyclocross Mocha IPA is a blend of Tokyo IPA aged in whiskey barrels and Strong Ale aged in wine barrels.

While retaining the hop-derived citrus aroma of the base beer, we have added the malty, fruity, sour, woody, rich tannin and a hint of caramel and whiskey complexity brought about by barrel aging. The 4th NIGHT WATCH PROJECT, Dessert-like Hazy IPA again! “Strawberry Milkshake IPA” “Pudding Hazy IPA” will be released on Thursday, July 29th, at the same time

Craft beer maker Far Yeast Brewing Co., Ltd. (Headquarters: Kosuge Village, Yamanashi Prefecture, Representative Director: Shiro Yamada) that has been introducing beers full of originality from Japan to the world, will release the 4th “NIGHT WATCH PROJECT,” on Thursday, July 29th. The fourth installment is a combination of “Strawberry Milkshake IPA” and “Pudding Hazy IPA.”

The “NIGHT WATCH PROJECT” is a unique concept project launched at the end of 2019 by a group of beer lover professionals from various business fields such as fashion, graphic design, architecture, and beer brewing.  Following the second project, “Hotcake Hazy IPA” and “Marron Milk Shake IPA” plus the third “Peach Milk Parfait,” the fourth project is two kinds of new sensation dessert-like beer “Hazy IPA*1.”  

*1 What is a Hazy IPA?  Hazy IPA is a style defined as “Juicy or Hazy India Pale Ale” in the Beer Style Guidelines by the U.S. Brewers Association. As the style name suggests, it focuses on bringing out the “juicy flavors” of the hops and is characterized by a cloudy appearance. Although it is a new beer style defined in 2018, it is popular among craft beer fans and is one of today’s most notable styles. It is sometimes referred to as New England IPA (NEIPA) or “Milkshake IPA.”

We used three types of citrusy hops for the base beer, mainly Cascade, Citra, and Comet. For dry-hopping, for the first time, we used French Barbe Rouge, which offers ripe red fruit flavors of currant, strawberry, and raspberry, and the addition of lactose gives the beer a milkshake-like tart mouthfeel. We further arranged this base beer in two different ways to complete two unique Hazy IPAs.

『Strawberry Milkshake IPA』

Since the base beer has a good enough hop-derived strawberry aroma, we aimed to reproduce the natural strawberry flavor with minimal fragrance. In addition, we used Hibiscus to give the beer a pink color and floral scent. Our Milk Shake IPA gives you aromas and flavors like the cute strawberries on the label design.

『Pudding Hazy IPA』

Pudding Hazy IPA is a dessert-like beer inspired by the “pastry beer “*2 popular in the U.S. 

Contrary to the aroma reminiscent of sweet pudding that makes you feel excited before drinking, the flavor is caramel with moderate bitterness. The sweetness is mild, and it is drinkable and with a good aftertaste.

*2 What is a “pastry beer”?

A generic term for beers with a rich, sweet, pastry-like flavor.
