Far Yeast Brewing opens its first overseas directly managed store in Taiwan.
In celebration of the opening, Far Yeast Brewing collaborated with UGLY HALF BEER in Taiwan to produce “Far Yeast Lychee Haze” using lychees grown in Taiwan on sale Thursday, September 30th.

Far Yeast Brewing Co. (Head office: Kosuge, Yamanashi Prefecture; Representative Director: Shiro Yamada),  a craft brewery that has been introducing highly original beers from Japan to the world, will hold the grand opening of its first overseas directly managed store, Far Yeast Taiwan Craftbeer Gastropub (Taiwan name: 源流台灣精釀啤酒餐酒館), in Taipei, Taiwan on Saturday, October 16th.

To celebrate the grand opening, the brewery has collaborated with Taiwanese brewery UGLY HALF BEER to brew a Fruited Hazy IPA using Taiwanese lychees called Far Yeast Lychee Haze, which will go on sale in Japan on Thursday, September 30th ahead of the Taiwanese launch.

 

■Open the first overseas directly managed store in Taipei, Taiwan.

Far Yeast Taiwan Craftbeer Gastropub will be Far Yeast Brewing’s fourth directly managed store, following those in Gotanda, Tokyo, Atami, Shizuoka, and Fukuoka, and its first overseas store, to be opened in Taipei, Taiwan.

Taiwan is ranked third in terms of the number of foreign visitors to Japan in 2019, and Japanese culture and food are attracting Taiwanese people a lot. Furthermore, in recent years, Taipei has seen an increase in the number of stylish beer pubs and beer restaurants where craft beer can be enjoyed, and recognition of craft beer is growing.

As of September 2021, Far Yeast Brewing exports their own brands of beer in 25 countries around the world, and we began selling our beer in Taiwan in 2014. Currently, our core brands KAGUA and Far Yeast are sold at many Japanese restaurants and craft beer specialty stores, and are gaining popularity in Taiwan. 

The directly managed Far Yeast Taiwan Craftbeer Gastropub has 15 taps and offers not only our core brands, but also Japanese craft beers that can only be tasted at this pub in Taiwan. It is a gastropub where you can enjoy a modern meal based on Japanese cuisine. It is located in the East District, where there are many foreign residents and business people, and we expect to attract an international clientele. At a time when it is difficult for people to travel overseas, we will continue to promote the variety of Japanese craft beers and the richness of Japanese food culture through Far Yeast Taiwan Craftbeer Gastropub.

■Fruit Hazy IPA made with lychee from Taiwan

To celebrate the opening of the Taiwan-owned store, we collaborated with an budding Taiwanese brewery, UGLY HALF BEER 酉鬼啤酒, to brew Far Yeast Lychee Haze using Taiwan-grown lychees.

Nelson Sauvin hops, with aromas like white grapes, and Sabro hops, with tropical notes like citrus and coconut, complement the gentle, sweet juice flavor of lychee and are reminiscent of the streets of Taipei.

UGLY HALF BEER will also be brewing a Fruited Hazy IPA using Japanese yuzu. This is a mutual collaboration using fruit from each country, beer style, and hops. While the Covid-19 prevented us from traveling across the border to visit each other’s breweries, we were able to create the recipe through a series of online meetings and emails. Both beers will be served at the Taiwan pub.

“Far Yeast Lychee Haze” will go on sale to the general public in Japan on Thursday, September 30th, and the company’s online store will begin accepting pre-orders from 1:00 p.m. on Tuesday, September 21 (shipping will begin on or after Friday, September 24). The fifth installment, “Melon Milkshake IPA” and “CBD Vanilla Milkshake IPA,” brings back the combination of fruit-based Milkshake IPA and CBD Milkshake IPA that was so popular in the third installment.

The “Melon Milkshake IPA” has a unique aroma of nostalgic Melon Soda with a hint of hops. The other is “CBD Vanilla Milkshake IPA,” which uses CBD (cannabidiol), an ingredient that has become a big boom in the beauty and health industry in the United States in recent years.

Both are perfect for relaxation, and each has its unique flavor.

This Milkshake IPA*1 is characterized by a smooth and mellow mouthfeel like a milkshake and a juicy and impactful aroma like a dessert.

For this base beer, we have added more lactose than ever before to make a sweet and full-bodied Milkshake IPA. We also used five different types of citrus aroma hops and hop products.

In particular, we used a lot of CRYO HOPS®*2 , a hop product with concentrated aroma components, and dry-hopped it multiple times to fully bring out the aroma of the hops.

To enhance the actual flavor and aroma of beer, only the lupulin, which contains the ingredient that gives beer its aroma, is condensed from the ball flower of the hop and made into pellets. It can effectively extract only the aroma components with a smaller dosage than regular hop pellets, creating a more robust hop aroma and flavor experience while reducing the greenness and astringency components.

The base beer is made with plenty of hops and lactose and added carefully selected melon flavor.

A juicy and dank Milkshake IPA with an impactful melon flavor and citrus aroma of hops that bursts from the moment you pour it into your glass.

It contains CBD, which is expected to have a relaxing effect. ■Tapecut become more hop-forward and drinkable.

  Far Yeast Brewing will celebrate its 10th anniversary on Tuesday, September 7. One of the significant turning points in its 10-year history was the establishment of its brewery in Kosuge Village, Yamanashi Prefecture. The 10th-anniversary beer we brewed this time, Far Yeast Tapecut 2 DDH IPA, is the second edition of Tapecut Imperial IPA, released as the first beer by our own Genryu Brewery in 2017 to great acclaim.

 The recipe from four years ago has been modified in flavor to account for current trends for this second brew. This time, we aimed for a hop-forward and drinkable beer and used plenty of 6 different hops with diverse aroma profiles such as tropical, citrus, and herbal. The DDH (Double Dry Hopping) process, which increases the number of dry-hopping, has been used to emphasize the hop aroma.

 In addition to Citra and Mosaic, the prominent hops used in Far Yeast Brewing’s standard beers, we also used new hop varieties such as HBC472. We carefully timed the best time to use each of the carefully selected hop varieties so that you could feel the overlapping aroma of the hops. We kept the robust malt flavor of the previous Tapecut Imperial IPA but lightened the body to make it more drinkable. This second beer reflects the shifts in beer trends over the past four years and the research and results of our brewing efforts. It is a taste of the progress we at Far Yeast Brewing have made so far.

Far Yeast Brewing, which has been introducing beers with originality from Japan to the world, will release “Far Yeast Farm to Brew” using fresh hops from Hokuto City in Yamanashi Prefecture on Saturday, September 18. Far Yeast Farm to Brew” using fresh hops from Hokuto City, Yamanashi Prefecture, will go on sale on Saturday, September 18, and pre-orders will be accepted from 1:00 p.m. on Tuesday, August 31. Hops harvested in the morning from the fields at the height of summer are put into the brewing kettle on the same day. This is a special beer that can only be drunk at this time of year, with a focus on freshness.

■A new challenge of making fresh-hop beer, using hops picked in the morning  and brewed on the same day.

  The seventh installment of the Yamanashi Support Project to enliven Yamanashi with beer is “Far Yeast Farm to Brew,” which uses fresh hops from Kobayashi Hop Farm, a hop grower in Hokuto City, Yamanashi Prefecture.

   In some parts of the U.S., fresh hop beers are brewed during the hop harvest season, when the hops are harvested and brewed on the same day, due to the fact that hop fields are spread out near the brewery.

  Since hops begin to deteriorate from the moment they are harvested, they are usually dried for long-term storage. However, since they are heated, some of the aroma components will inevitably volatilize. Even when fresh hops are used to make beer without the drying process, frozen hops are mostly used, as there are only a limited number of places in Japan where hops are grown nowadays, and they are frozen immediately after harvesting.

■Freshly picked hops from Kobayashi Hop Farm in Hokuto City, which is working to revitalize hop cultivation

 Hokuto City in Yamanashi Prefecture, located at the southern foot of Mt. Yatsugatake, was the first place in Japan to start full-scale hop cultivation. Today, however, the number of hop farmers in the prefecture is on the decline. Mr. Yoshimichi Kobayashi of Kobayashi Hop Farm is working on hop cultivation to convey the appeal of hops and to revive and revitalize Hokuto City hops.

 In late July, the brewery staff visited Mr. Kobayashi’s farm in Hokuto City early in the morning to help harvest 40kg of hops, which took about 4 hours. In the early afternoon, the fresh hops were brought to the Genryu Brewery where the brewing team was waiting in the shortest possible time, and in order to effectively extract the aroma components, the flowers were manually broken down one by one and put directly into the brewing kettle.

■ The Kölsch style which is aromatic and has a light body taste.

Far Yeast Farm to Brew is a Kölsch-style beer that is aromatic and easy to drink in order to simply enjoy the aroma and flavor of fresh hops.

 To achieve a classic Kölsch style, we blended three types of malt: Pilsner Malt, Carapils Malt, and wheat. For the hops, we used a small amount of the German hop Merkur for the bittering, but other than that, all the hops are from Hokuto City. The two varieties used this time were “Sorachi Ace,” which has an aroma like cedar, cypress, and lemongrass, and “Sterling,” which has a refreshing bitterness with little stimulation.You can enjoy the fruity flavor of malt and hops in a refreshing and drinkable way.

   Far Yeast Farm to Brew will go on sale to the general public on Saturday, September 18, and our online store will start accepting pre-orders from 13:00 on Tuesday, August 31. 【About Yamanashi Support Project】

Far Yeast Brewing’s “Yamanashi Support Project” was launched in July 2020 with the hope of revitalizing local industry through brewing beer using products produced in the prefecture. In October of the same year, we relocated our headquarters from Shibuya to Kosuge Village in Yamanashi Prefecture, where our brewery is located, and further strengthened our ties with producers and businesses in the prefecture.
