Far Yeast Brewing's new standard beer, "Far Yeast Hop Frontier -Juicy IPA-," will be paired with a menu based on aroma analysis data at its Gotanda store starting Friday, November 12th.

 Far Yeast Brewing was one of the first in Japan to put the latest hop theory and advanced brewing techniques into practice, and has been selling "Far Yeast Hop Frontier -Juicy IPA-" (hereinafter "Hop Frontier") as a new standard product since July 2021, which maximizes the aromatic components of hops through a scientific approach.
With the cooperation of Shimadzu Corporation, we analyzed the aromatic components of "Hop Frontier" and developed a pairing menu based on the results.The menu will be available at our directly managed store, "Far Yeast Tokyo Brewery & Grill" in Gotanda, Tokyo, from Friday, November 12, 2021.

■ "Hop Frontier" maximizes hop aroma with a scientific approach
Recent research has advanced the analysis of aroma compounds found in hops. Particular attention has been
focused on "survivables," compounds that survive the brewing process and contribute to the aroma of the finished beer. Compounds with low sensory thresholds and relatively low volatility, such as monoterpene alcohols, hop-derived esters, and thiols, are believed to remain strong in the final beer product even after the brewing process, resulting in a powerful aroma impact. Hop Frontier explores brewing methods that effectively extract these aroma compounds, and takes on the challenge of maximizing the various aromas that have been considered difficult to achieve until now.
 The first batch was released in March 2021, and it became a regular beer in July, brewing and selling it year-round as Far Yeast Brewing's new regular beer. This juicy IPA is bursting with fruity and tropical aromas.

■Aromatic component analysis confirms the "rich aroma"
We recently analyzed the aroma components of "Hop Fronter" using Shimadzu's gas chromatography mass spectrometry (GC-MS) * . After analyzing multiple products, including beers from other companies, we found that it contained significantly higher amounts of monoterpene compounds such as linalool, geraniol, and nerol compared to other companies' products. These are compounds known as "Sruvivables" and are said to bring out floral/fruity aroma flavors, and the analytical data also demonstrated that the aroma components were extracted in abundance as intended.

*Gas chromatography mass spectrometry (GC-MS):
A method in which the components of a mixture sample to be analyzed are separated using a gas chromatograph (GC) and then detected using a mass spectrometer (MS).

[Figure 1] The aroma components of products from major domestic beer manufacturers and craft beer makers were analyzed in detail, and the results were plotted on a graph. Compared to other products, Hop Frontier was found to be in a significantly different position, with a distinctive aroma that was superior to other beers .

[Figure 2] A list of aroma compounds that were found in greater amounts in Hop Frontier than in other beers. The yellow highlights represent monoterpene compounds, and the analysis revealed that Hop Frontier contained a large amount of multiple monoterpene aromas.

■New menu with aroma pairings based on analytical data
Based on the results of this analysis, Far Yeast Tokyo Brewery & Grill, a directly managed store in Gotanda, Tokyo, developed a pairing menu based on the detected aroma compounds.

The green aroma of "Hop Frontier" is complemented by "fried oysters" served with a tartar sauce made with cucumber and kiwi. The simple combination of oysters, cucumber, and kiwi, which all share a green aroma, enhances the aroma of "Hop Frontier."
The "Naruto Kintoki Mont Blanc" focuses on the floral and citrus aromas of "Hop Frontier." This Mont Blanc is made with sweet potatoes, which contain floral aromas, and is filled with Naruto Kintoki sweet potatoes simmered with lemon. The lemon picks up the citrus aroma of the IPA, adding depth to the pairing.

These new menu items will be available at Far Yeast Tokyo Brewery & Grill from Friday, November 12th. These three dishes, including the already available Kinpira Carrot and Apple Salad, will be available as part of the Hop Frontier pairing menu.

This salad focuses on floral aromas. The carrots are kinpira-style with the scent of cardamom, which brings out the citrus aroma of the IPA.

Fried oysters paired with tartar sauce for 550 yen (tax included) To allow you to experience the green aroma of Hop Frontier, we have combined oysters, cucumber, and kiwi, ingredients that simply have a green aroma. These fried oysters are served with a tartar sauce made with cucumber and kiwi.

Naruto Kintoki Mont Blanc

This Mont Blanc is made with sweet potatoes that have a floral aroma. The cream is made with seasonal Naruto Kintoki sweet potatoes. The lemon-simmered Naruto Kintoki sweet potatoes inside complement the citrus aroma of the IPA, adding depth to the pairing.
