This project was launched in 2019 as a beer that challenges new possibilities for craft beer.
The project name evokes the idea of going "off trail" - a path that is not paved - and setting itself apart from well-paved roads.
A rich beer made using microorganisms
Off Trail is committed to brewing beer that utilizes microorganisms other than brewer's yeast, which are thoroughly washed away in modern beers. By using the barrel aging method, which involves aging beer in barrels previously used for wine, sake, and whiskey, we are constantly challenging ourselves to create rich and complex aromas by utilizing a variety of wild yeasts and microorganisms.
The appeal of unique beers that cannot be replicated
Each barrel-aged base beer has a strong personality due to the environment inside the barrel, and you will never encounter the same one twice. We blend regional fruits and spices to match each beer, and sometimes we blend base beers together. The chemical reactions that occur in nature give us new surprises with each brewing.
