Using 2.5 times the amount of malt as in the regular brewing process, the beer is boiled for as long as 7 hours to create a high-alcohol, dry beer while still retaining the ethereal characteristics of the Belgian yeast. By drinking it over time, you can enjoy the changes in flavor depending on the temperature. The in-container secondary fermentation process allows for a delicate mouthfeel and suppresses dissolved oxygen (DO) in the container, making it resistant to deterioration and suitable for long-term aging, as is typical of Belgian beers.
