Far Yeast Brewing (Headquarters: Kosuge Village, Yamanashi Prefecture; CEO: Shiro Yamada; hereinafter referred to as "Our Company"), a brand that challenges innovative beer brewing, will be selling "Off Trail NEOSOURISM," the second collaboration with Inkhorn Brewing in Mejiro, Tokyo, which began brewing in 2021, in limited quantities from Wednesday, March 12, 2025.

■Aged for 17 months in wine oak barrels and blended with black currant and boysenberry. This is the second collaboration in about two years since the last one in 2023!
The Fruited Sour brewed by Inkhorn Brewing is aged for 17 months in wine oak barrels, then blended with cassis and boysenberry, accented with vanilla. The result is a Barrel Aged Fruited Sour that makes the most of the cassis and plum character of the base beer while adding the oak and funky flavors that are characteristic of Off Trail.
Enjoy the unique character of barrel-aged beer and the unique blending that only happens once in a lifetime. Off Trail is a brand that challenges new possibilities in craft beer. They use microorganisms other than beer yeast to create unique beers with rich and complex flavors through barrel aging, which involves aging beers in wooden barrels. The end result changes depending on the barrel and the environment in which they are aged, so the unique flavor is what makes them so appealing.
Our brewery's barrel room always has around 80 barrel-aged beers stored, and we select and blend the best combination of barrels each time to create our final product.
Even barrels that are too stimulating or unique on their own are blended with other beers, and sometimes combined with fruits, herbs, spices, etc., to add depth and complexity, aiming for a well-balanced overall finish.
"Off Trai NEOSOURISM" will begin shipping to beer bars, restaurants, and liquor stores nationwide from Wednesday, March 12th, and will be available on the Far Yeast Brewing official online store from Thursday, March 13th.

[What is Off Trail?]
Launched in November 2019 as a follow-up to the two brands "KAGUA" and "Far Yeast," "Off Trail" is a brand that explores new possibilities in craft beer. Its name comes from the image of forging ahead on unpaved roads, setting itself apart from well-paved roads. The beer is brewed using the barrel-aging method, whereby beer is aged in barrels previously used for wine, sake, and whiskey, in order to develop rich and complex aromas by utilizing microorganisms other than brewer's yeast. The brand explores unique flavors by blending seasonal fruits such as grapes and peaches, as well as regional specialties, to match the characteristics of the base beer.
