Off Trail Wild Caught 2024/The third collaboration with Tanbayama Village's game brand "Tabajibie"!

Far Yeast Brewing, a brand that challenges itself with innovative beer brewing, will be releasing a limited edition barrel-aged beer, "Off Trail Wild Caught 2024," from Tuesday, November 26th. The third beer is a collaboration between Far Yeast Brewing and Tabajibier, a game meat brand from Tanbayama Village, Yamanashi Prefecture, neighboring Kosuge Village, where the brewery is located.

■The third collaboration with TABA GIBIER is themed around pairing with roasted venison. Tanbayama Village, located across the mountains from Kosuge Village in Yamanashi Prefecture, where our brewery is located, is a village rich in nature, with the pure waters of the source of the Tama River flowing through it, just like Kosuge Village. The village has inherited a long-standing hunting culture and has a culture of revering wild animals caught through hunting as "gifts from the mountain gods." Tanbayama Village's game meat brand, "TABA GIBIER," aims to spread awareness of Tanbayama Village's hunting culture to as many people as possible, by providing high-quality, safe game meat and working to utilize wild animals and promote regional development.
This marks our third collaboration with TABA GIBIER, and we are returning to our roots with a blend that pairs perfectly with TABA GIBIER's roasted venison. We are releasing a barrel-aged sour red ale that is designed to complement game meat.

■A beer aged for up to 14 months, blended with fresh Japanese pepper from Mount Tanba. "Off Trail Wild Caught 2024" is based on a 10-month-aged Red Ale, blended with 14-month-aged Kveik Sour barrels and 12-month-aged Sour Porter barrels. Characters such as caramel, raisin, and berry are supported by citrus-like acidity and cocoa notes. A small amount of Sour Red barrels, with vinegary nuances, is also blended to contribute to a more complex acidity.
Blending this base beer with fresh Japanese pepper from Mount Tanba adds a refreshing citrus flavor, creating a refreshing accent to the complex flavor of the base blend. The moderately complex acidity, the citrus flavor of the Japanese pepper, and the nuances of oak barrels that come through the nose enhance the flavor of the roast venison, creating a refreshing finish.

"Off Trail" was launched in November 2019 as a brand that challenges new possibilities in craft beer. Using microorganisms other than beer yeast, they create unique beers with rich and complex flavors by using a barrel-aging method in which the beer is aged in wooden barrels. The end result changes depending on the barrel and the environment in which it is aged, so the appeal is that no two beers are the same, resulting in a unique, once-in-a-lifetime flavor.

Our brewery's barrel room always has around 80 barrel-aged beers stored, and we select and blend the best combination of barrels each time to create our final product.
Even barrels that are too stimulating or unique on their own are blended with other beers, and sometimes combined with fruits, herbs, spices, etc., to add depth and complexity, aiming for a well-balanced overall finish.

[What is Off Trail?]
Launched in November 2019 as a follow-up to the two brands "KAGUA" and "Far Yeast," "Off Trail" is a brand that explores new possibilities in craft beer. Its name comes from the image of forging ahead on unpaved roads, setting itself apart from well-paved roads. The beer is brewed using the barrel-aging method, whereby beer is aged in barrels previously used for wine, sake, and whiskey, in order to develop rich and complex aromas by utilizing microorganisms other than brewer's yeast. The brand explores unique flavors by blending seasonal fruits such as grapes and peaches, as well as regional specialties, to match the characteristics of the base beer.
