Off Trail, a brand that challenges itself with innovative beer brewing, will be selling a limited edition Off Trail Chaotic Order, which uses Koshu grape juice and winemaking techniques, from Tuesday, December 19, 2023.
■A hybrid product of beer and wine made with Koshu grape juice
Off Trail is a brand that is challenging new possibilities for craft beer, and they use microorganisms other than beer yeast to create unique beers with rich and complex flavors using a barrel-aging method that involves aging the beer in wooden barrels.The finished product changes depending on the barrel and the environment in which it is aged, so no two beers are exactly alike, making for a unique, one-of-a-kind flavor.
This time, we collaborated with Iwasaki Brewery, a long-established winery located in Katsunuma, the birthplace of Japanese wine. As a brewery with a brewery in Yamanashi, one of the leading winery areas in the country, we took on the challenge of creating a hybrid product that utilizes winemaking techniques.
Aoki, the leader of the Off Trail Project, visited Iwasaki Brewery to learn about winemaking, harvest the grapes with his own hands, and observe the brewing process. On the day of brewing, Iwasaki Brewery processed the Koshu grape juice into juice, which he brought back and used in the brewing process.
■ Juicy and funky finish with a hint of apple cider flavor
400L of Koshu grape juice is blended with 400L of spiced rye ale that has been aged for seven months in oak barrels. When wine yeast, provided by Iwasaki Brewery, is added and fermented, the fruity flavor, acidity, and astringency of the tannins of the wine are intricately blended with the acidity and funkiness of the beer, resulting in a chaotic yet somehow orderly taste. This impression is why we named this beer "Chaotic Order."
Next, wine bacteria were added to allow malolactic fermentation, a process in winemaking that converts the sharply sour malic acid in the grape juice into the milder lactic acid. Finally, a slightly acetic sour blonde was added to complete the wine.
Juicy, funky, fruity, and dry. Despite being made from grapes, it also has hints of apple cider, creating a complex yet cohesive flavor with an exquisite balance.
"Off Trail Chaotic Order" will be available for purchase in limited quantities on the Far Yeast Brewing official web store from 12:00 on Tuesday, December 19th. Purchases made on the official web store will be shipped sequentially from Wednesday, December 20th to beer bars, restaurants, and liquor stores nationwide .

Launched in November 2019 as a follow-up to the two brands "KAGUA" and "Far Yeast," "Off Trail" is a brand that explores new possibilities in craft beer. Its name evokes the image of venturing off the paved road and forging ahead on unpaved paths. By using the barrel-aging method, which involves aging beer in barrels previously used for wine, sake, and whiskey, Off Trail strives to brew beer that utilizes microorganisms other than brewer's yeast. Barrel-aged base beers develop a strong character due to the environment inside the barrel, and natural chemical reactions create rich, complex aromas. By blending seasonal fruits like grapes and peaches and regional specialties to match the characteristics of the base beer, Off Trail strives to create unique flavors.
