Far Yeast Brewing, a brand that challenges itself with innovative beer brewing, will be releasing a limited edition barrel-aged beer, "Off Trail Wild Caught 2023," in collaboration with Tabajibie, a game meat brand from Tanbayama Village, Yamanashi Prefecture, neighboring Kosuge Village, where Far Yeast Brewing's brewery is located, starting Tuesday, November 28, 2023.

"Off Trail" was launched in November 2019 as a brand that challenges new possibilities in craft beer. Using microorganisms other than beer yeast, they create unique beers with rich and complex flavors by using a barrel-aging method in which the beer is aged in wooden barrels. The end result changes depending on the barrel and the environment in which it is aged, so the appeal is that no two beers are the same, resulting in a unique, once-in-a-lifetime flavor.

This marks the second collaboration between Far Yeast Brewing and Tabajibie, a wild game meat brand from Tanbayama Village, a neighboring village across the mountains from Kosuge Village in Yamanashi Prefecture, where the Genryu Brewery is located. Tanbayama Village, like Kosuge Village, is a village rich in nature, with the pure waters of the source of the Tama River flowing through it. The village has inherited a long-standing hunting culture, and has a culture of revering wild animals hunted as "gifts from the mountain gods." Aiming to spread awareness of Tanbayama Village's hunting culture, Tabajibie provides high-quality, safe wild game meat, while also working to utilize wild animals and promote regional development.
The first collaboration, "Off Trail Wild Caught," was released in limited quantities in March of this year. It was a barrel-aged wild red ale specially blended to pair perfectly with Taba game venison roast. Through this collaboration, the two companies have continued to promote " Terroir," one of Off Trail's themes , by providing game at Off Trail events and co-hosting the Genryu Brewery Sustainable Tourism event, combining beer with the food culture of the source region.
The second release, "Wild Caught 2023," is a Barrel Aged Sour Amber Ale, a blend perfectly matched with Taba Gibier's signature and highly popular "venison burger." It's a sour red ale aged for nine months in red wine oak barrels blended with a wheat strong ale. Compared to the previous release, "Wild Caught," it uses more Japanese pepper from Tanbayama Village, giving it a wilder flavor. The base beer's body is thick enough to withstand the spiciness of the Japanese pepper, while maintaining drinkability to ensure the juicy venison burger is delicious down to the last drop.

"Off Trail Wild Caught 2023" will be available for purchase in limited quantities on the Far Yeast Brewing official web store from 12:00 on Tuesday, November 28th. Purchases on the official web store and shipments to beer bars, restaurants, and liquor stores nationwide will begin sequentially from Wednesday, November 29th .
