Off Trail, a brand that challenges itself with innovative beer brewing, will be collaborating with Gomi Soy Sauce Co., Ltd., a miso brewery in Kofu City, Yamanashi Prefecture, to release a limited edition Off Trail Sleeping Dragon starting Tuesday, August 29, 2023.
■ A unique collaboration between miso and craft beer is born
Gomi Soy Sauce, based in Kofu City, Yamanashi Prefecture, is a long-established company that has been making Koshu miso using natural fermentation in wooden barrels since its founding in 1868. This time, the first collaboration between two companies based in Yamanashi Prefecture, both with a focus on fermentation, has been realized, resulting in the creation of a unique collaboration between miso and craft beer.
"Off Trail" is a project that continues to brew unique and innovative beers that cannot be reproduced, focusing on barrel aging techniques that utilize microorganisms other than beer yeast, and setting itself apart from the "well-paved road" and forging ahead on "off trails" (unpaved roads). This time, the "Off Trail" brand attempted its first Gose * .
*Gose is a beer style brewed using lactic acid fermentation and salted to create a sour and salty taste.
■ A crisp, dry barrel-aged gose, with the miso enzymes consuming all the sugar.
The base beer is a blend of sour blonde ales aged for 13 months in red wine oak barrels, with Gomi Shoyu miso added during the brewing process. The remaining enzymes in the miso consume the remaining sugars in the base beer and the miso itself, further fermenting the beer, resulting in a drier finish with a higher alcohol content than expected.
The name "Sleeping Dragon" comes from the likeness of the enzymes in miso to a sleeping dragon. By adding miso, the dragon (enzyme) is awakened and consumes all the sugar in the wort, resulting in a crisp, dry beer like no other before it.
The acidity of the base beer and the saltiness of the miso are well balanced, and you can enjoy a complex flavor that has a fruity taste like white wine and the funkiness that is characteristic of ``Off Trail.''
"Off Trail Sleeping Dragon" will be available for purchase in limited quantities on the Far Yeast Brewing official web store from 12:00 on Tuesday, August 29th. Purchases made on the official web store will be shipped sequentially from Wednesday, August 30th to beer bars, restaurants, and liquor stores nationwide .
