Far Yeast Brewing Co., Ltd. (Headquarters: Kosuge Village, Yamanashi Prefecture; CEO: Shiro Yamada) will be releasing a limited edition " Off Trail Lightly Toasted" from its innovative beer brand "Off Trail," in collaboration with Inkhorn Brewing in Mejiro, Tokyo, on Tuesday, April 25, 2023.
"Off Trail" was launched in 2019 as a beer that challenges new possibilities in craft beer. Using barrel aging techniques that utilize microorganisms other than brewer's yeast, this project continues to brew unique and innovative beers that cannot be reproduced, setting itself apart from the "well-paved road" and forging ahead on "off trails" (i.e., unpaved roads).
The label design for "Off Trail" will be updated to better communicate the complex flavors that even the brewers cannot predict to customers. The new design will clearly differentiate each Far Yeast Brewing brand, while also reflecting the unique product concepts of each product, allowing drinkers to expand their imagination and impressions and enjoy the flavor visually. Illustrator yamastomp will be in charge of the illustrations .
The first in the label revamp series, "Lightly Toasted," is the first collaboration with Inkhorn Brewing, an up-and-coming brewery in Mejiro, Tokyo. The two brewers have been sharing ideas and exploring blending since last fall, and the new product is finally here.
The base is primarily a barrel-aged red ale that brings out the flavor of the oak barrels, with a blonde ale and a strong ale added for balance. Inkhorn Brewing came up with the idea of using coconut as an accent. Toasted and fresh coconut fines were added twice: once to the base beer during aging and once after blending. Dry-hopping with Sabro hops, which have a coconut aroma, resulted in a barrel-aged sour amber ale that brings out the coconut flavor.
"Lightly Toasted" literally means "lightly burnt" or "lightly toasted," but it can also refer to getting sunburned after a day in the sun at the beach, or, by extension, to being a little drunk, as the face gets red.
The lightly roasted coconut has a gentle aroma and flavor, a mild acidity and funkiness, and the low alcohol content for an Off Trail product gives it a light and refreshing feel, making it perfect for the upcoming season.
In the future, Inkhorn Brewing will also be releasing a collaboration beer with Off Trail.
"Off Trail Lightly Toasted " will be available for purchase on the Far Yeast Brewing online store from Tuesday, April 25th, with shipments starting Wednesday, April 26th.

[What is Off Trail?]
Launched in November 2019 as a follow-up to the two brands "KAGUA" and "Far Yeast," "Off Trail" is a brand that explores new possibilities in craft beer. Its name comes from the image of forging ahead on unpaved roads, setting itself apart from well-paved roads. The beer is brewed using the barrel-aging method, whereby beer is aged in barrels previously used for wine, sake, and whiskey, in order to develop rich and complex aromas by utilizing microorganisms other than brewer's yeast. The brand explores unique flavors by blending seasonal fruits such as grapes and peaches, as well as regional specialties, to match the characteristics of the base beer.
