Far Yeast Brewing Co., Ltd. (Headquarters: Kosuge Village, Yamanashi Prefecture; CEO: Shiro Yamada) will begin selling a limited quantity of plum wine , "Off Trail - Azeotrope Yoinotsuki Kosugemura Umeshu 2023 , " made with plums from the local village of Kosuge, Yamanashi Prefecture, from its brand " Off Trail - Azeotrope," which is challenging itself with innovative distilled spirits production, on Tuesday, April 18, 2023.

Barrel-aged plum wine made from upcycled Ross beer

Launched in October 2021, "Off Trail - Azeotrope" is a crossover brand between beer and distilled spirits that utilizes the fermentation and barrel aging know-how cultivated through beer brewing to create innovative spirits and liqueurs.

Last year, the brand released its first plum liquor, "Koshu Wine Barrel Aged Plum Liquor," made by steeping plums from Kosuge Village, Yamanashi Prefecture, where the brewery is located, in undiluted spirits distilled from Ross Beer. The limited number of units sold out within a day. Due to the positive reception, this year we will be selling an upcycled barrel-aged plum liquor made with plums from Kosuge Village again.

■A rich fragrance of plums and botanicals from Kosuge Village

This year, our staff once again participated in the harvesting of plum groves, which have become difficult to maintain due to the aging of producers. Using a gin made from beer that had gone to waste as a base, we aged an additional 50kg of harvested plums before macerating them in wooden barrels for four months.
The main botanical used is the Taiwanese spice margao. The rich aroma of plum is followed by a citrus and unique refreshing feeling, and the sweetness of malt gives a mellow aftertaste, making this a product that can be enjoyed in a variety of ways in one glass.

" Off Trail -Azeotrope Yoi no Tsuki Kosuge Village Plum Wine 2023," which allows you to taste the terroir of the local Kosuge Village, will be available for purchase on our online store from Tuesday, April 18th, and will begin shipping from Wednesday, April 19th.

In addition, sales of the product under an original label will begin at Kosuge Roadside Station in Kosuge Village from late April.
