Far Yeast Brewing Co., Ltd. (Headquarters: Kosuge Village, Yamanashi Prefecture; CEO: Shiro Yamada) will be releasing a limited edition "Off Trail Wild Caught " from Tuesday, March 28, 2023, as part of its innovative beer brand "Off Trail." The beer is a collaboration between the brewery and Tabajibier, a wild game brand from Tanbayama Village, Yamanashi Prefecture, neighboring Kosuge Village.
"Off Trail" was launched in 2019 as the third brand following "KAGUA" and "Far Yeast." Mainly using barrel aging, which involves aging beer in wooden barrels, the brand makes use of microorganisms other than beer yeast to create unique beers with rich and complex flavors.
This time, Far Yeast Brewing is collaborating with Taba Gibier, a wild game brand from Tanbayama Village, a neighboring village across the mountains from Kosuge Village in Yamanashi Prefecture, where the Genryu Brewery is located. They are releasing a barrel-aged wild red ale, specially blended to perfectly complement wild game.
Tanbayama Village, like Kosuge Village, is a village rich in nature, with the pure waters of the source of the Tama River flowing through it. It has inherited a long-standing hunting culture, and has a culture of respecting wild animals caught through hunting as "gifts from the mountain gods." Tabajibie aims to spread awareness of Tanbayama Village's hunting culture to as many people as possible, by providing high-quality, safe wild game meat, and working to utilize wild animals and promote the local area.
This collaborative beer, "Off Trail Wild Caught," was created to celebrate the wildlife that inhabits Chichibu-Tama-Kai National Park, which encompasses both Kosuge Village and Tanbayama Village. The base beer is a stout aged for 24 months in barrels at Kosuge Village's Genryu Brewery, followed by an 18-month sour porter, a 12-month sour red, and a 14-month strong ale, all crafted to perfectly complement game. The result is a balanced blend of berry and toasty malt notes and oak barrel tannins, with a mild acidity based on acetic and lactic acids. Furthermore, wild Japanese peppercorns harvested in Tanbayama Village are added. The citrusy, green, and fresh flavors of the Japanese peppercorns add a refreshing accent to the complex flavor of the base blend. This product also embodies one of the themes of "Off Trail," terroir.
"Off Trail Wild Caught" will begin shipping on Wednesday, March 29th, and will be available for purchase on our official online store from 12:00 on Tuesday, March 28th.
