Far Yeast Brewing , a brand committed to innovative beer brewing, will begin shipping "Off Trail Ghost in the Beans," a limited-edition beer brewed in collaboration with BICYCLE COFFEE TOKYO, a natural roastery based in the San Francisco Bay Area, on Monday, March 6, 2023.
The collaboration with BICYCLE COFFEE TOKYO has been an annual tradition since the first collaboration on Far Yeast Bicycle Coffee IPA in 2017, and this year marks the seventh year. The latest product is a collaboration with Off Trail, a brand that brews unique beers using microorganisms other than beer yeast, and is a product in which both parties have tried new techniques.
This new release uses the premium Geisha coffee bean, marking BICYCLE COFFEE TOKYO's first attempt at barrel-aging beans. Geisha is one of the rarest and most sought-after specialty coffees in the world, and was also used in the 2022 collaboration beer, Far Yeast Bicycle Geisha Golden Ale. The beans were aged in red wine barrels previously used to age spirits for Far Yeast Brewing's distillery project, Off Trail - Azeotrope.
Meanwhile, Far Yeast Brewing uses a pale ale fermented with 100% wild Brettanomyces yeast as the base beer to bring out the fruity flavor of the coffee, marking the first time the Off Trail project has attempted to create a product that is not barrel-aged.
Preparation for this product began in early summer 2022. Coffee beans were aged in barrels for three months , resulting in barrel-aged beans with rich aromas of strawberry, vanilla, and caramel. Furthermore, coffee beans blended with multiple varieties and roasting levels were steeped in beer in various proportions, and after repeated tastings, an original blend was created.
The aroma is robust, with notes of roasted coffee beans, vanilla, caramel, and brandy underpinned by tropical fruit and funky notes. The flavor is unexpectedly light, with a dry, pleasant acidity reminiscent of citrus and cherry, and the exquisitely blended coffee profile appears and disappears like an elusive ghost on the palate.
While most coffee beers are dark beers like porter and stout, this project began with the desire to explore the possibilities of coffee in a different style. Although this is not a barrel-aged beer, the new beer, "Ghost in the Beans," expresses the complex flavor of barrel-aged beer using coffee beans.
This product, Off Trail's first canned product, will be available for purchase on the official online store from 12:00 on Tuesday, February 28th, and will begin shipping from Monday, March 6th.
