Far Yeast Brewing , a brand that challenges itself with innovative distilled spirits production, "Off Trail - Azeotrope" (hereinafter "Azeotrope"), will be releasing a limited edition craft gin , " Off Trail - Azeotrope × BICYCLE COFFEE Enjoy By Cycle TOKYO IPA Distilled," in collaboration with BICYCLE COFFEE TOKYO, a natural roastery born in the San Francisco Bay Area , on Tuesday, November 22, 2022.
"Off Trail - Azeotrope" is a crossover brand of beer and distilled spirits that utilizes the know-how of fermentation and barrel aging (wooden barrel aging) cultivated through beer brewing to take on the challenge of creating innovative spirits and liqueurs.
This is Azeotrope's first collaboration, and they have teamed up with BICYCLE COFFEE TOKYO, with whom they have collaborated every year to create a craft gin infused with coffee beans. This collaboration was made possible by Azeotrope's support for their initiative to upcycle roast beer into distilled spirits.
The keyword for this piece is "Cycle." It has two meanings: the bicycle of "BICYCLE COFFEE TOKYO" and the cycle that represents circulation.
The classic beer "Far Yeast Tokyo IPA," which was lost, has been distilled and infused with "BICYCLE COFFEE TOKYO"'s original blend of lightly roasted coffee beans, upcycled into a refreshing craft gin.
"Tokyo IPA" is carefully distilled twice in our own pot still in Kosuge Village, Yamanashi Prefecture, resulting in a rich, sweet flavor derived from the malt. To complement the citrus notes of lemon, orange, and grapefruit characteristic of the coffee beans used for steeping, we've added seven botanicals, including juniper berries, orange peel, and lemongrass. The roasted coffee aroma, caramel and chocolate notes, refreshing citrus notes, and subtle berry flavors derived from the beans are present. Take your time to enjoy the complex flavors that emerge one after the other. We also recommend adding a few drops to your regular coffee to experience the changing flavors.

Launched in October 2021, this craft spirits brand crosses the boundaries between beer and distilled spirits.
