To commemorate the third anniversary of Off Trail, a brand that challenges itself to brew innovative beer, Far Yeast Brewing will release a limited edition " Off Trail Mended with Spice" on Sunday, October 30, 2022.
"Off Trail" was launched in November 2019 as the third brand to explore new possibilities in craft beer, following "KAGUA" and "Far Yeast." Utilizing microorganisms other than beer yeast, the brand produces unique beers with rich and complex flavors through barrel aging, which involves aging the beer in wooden barrels.
"Off Trail Mended with Spice," the third anniversary beer for "Off Trail," is a chai spice chocolate porter that aims for a taste never before attempted. In preparation for brewing, we held a "Fan Vote to Decide the Off Trail 3rd Anniversary Product" among our email newsletter subscribers on our official online store. Of the three most highly acclaimed beers to date and four completely new products, the fan vote selected a new product created using an untried blend.
Off Trail has released 28 barrel -aged beers to date. The flavor changes depending on the barrel and environment in which they are aged, and the appeal lies in the lack of reproducibility, meaning no two beers are the same. This commemorative beer, brewed in response to the expectations of Off Trail to create a one-of-a-kind creation, is truly a culmination of three years of work.
The base beer is made from four imperial porter barrels and one salted caramel chocolate porter barrel, aged in a variety of different barrels. Two of the barrels are soy sauce barrels used in the blending of "Shoyu the Way," released in December 2021, two are wine barrels, and one is a bourbon whiskey barrel. Blending these barrels brings together the diverse flavors exuded from each barrel's history, creating a new taste. Additionally, cinnamon, cardamom, ginger, cloves, nutmeg, and cocoa nibs were added to indicate the direction of the blend. Inspired by the philosophy of kintsugi (golden lacquerware), just as gold connects shards of pottery to create a more beautiful piece, the spices connect the different flavors, resulting in a chai-spice-like taste.
Behind the vivid spice and aromas of chocolate, berries, and cherries, a sourness that evokes the history of the barrel, a woody flavor, and a nostalgic complexity reminiscent of cigar tobacco spreads throughout the mouth.It has a pleasant taste without the high alcohol content, but the finish is well-bodied, making it a perfect finish to sip slowly in the coming season, enjoying the changing aromas as the temperature changes.

[What is Off Trail?]
Launched in November 2019 as a follow-up to the two brands "KAGUA" and "Far Yeast," "Off Trail" is a brand that explores new possibilities in craft beer. Its name comes from the image of forging ahead on unpaved roads, setting itself apart from well-paved roads. The beer is brewed using the barrel-aging method, whereby beer is aged in barrels previously used for wine, sake, and whiskey, in order to develop rich and complex aromas by utilizing microorganisms other than brewer's yeast.
