"Unexpected collaboration" collaboration with Kikyo Shingen Mochi "Kiku Shingen Kuromitsu Black" made with black honey and kinako (roasted soybean flour) will be on sale from Tuesday, June 14th

Far Yeast Brewing has collaborated with Kikyoya Co., Ltd. (Fuefuki City, Yamanashi Prefecture; President and CEO: Jun Nakamaru), a confectionery manufacturer that produces and sells Kikyo Shingen Mochi and other sweets. The new drink, "Kikyo Shingen Kuromitsu Black," will be released on Tuesday, June 14th. The drink uses the same black syrup and kinako (roasted soybean flour) used in Kikyo Shingen Mochi, resulting in a refreshingly dry flavor.
■Collaboration with Yamanashi's representative Japanese sweet, "Kikyō Shingen Mochi"
Since 2020, Far Yeast Brewing has been working on the "Yamanashi Support Project," promoting the appeal of Yamanashi through beer with local businesses and producers. Instead of discarding specialty crops like peaches and grapes, we repurpose them into beer and deliver them to our customers. This project has also grown into a significant contribution to our company's SDGs. To further address social issues and create products that draw more people to Yamanashi, in June 2021, we approached Kikyoya, a leading confectionery manufacturer in Yamanashi Prefecture, about collaborating. At the time, Kikyoya's President, Mr. Nakamaru, had also been considering producing beer. He also mentioned that the manufacturing process generates a large amount of soybean flour (kinako) offcuts, an ingredient in Kikyo Shingen Mochi. This led to the creation of a collaborative product utilizing the offcuts.
■An initiative to reduce food waste by using soybean flour scraps generated during the manufacturing process
Kikyoya's manufacturing plant inevitably produces some soybean flour waste. There is no problem with the quality as a food product, and some of it would normally be reused as animal feed, but this time we have upcycled it into alcohol. Kikyoya provided us with a sample of soybean flour, and last fall we conducted a test brew of 300L at our Tokyo Brewery, our pilot brewery, and offered it exclusively at our directly managed stores as "KINACO DRY STOUT." After being pleased with the quality and the positive reaction from customers, and after receiving tasting feedback from Kikyoya's President Nakamaru, we launched the product this summer, about a year later.
■A genuine product with a dry taste that is not overly sweet, while still giving off the flavor of brown sugar and kinako.
"Kikyō Shingen Kuromitsu Black" is a dry stout characterized by a deep sweetness of brown sugar and kinako (roasted soybean flour) reminiscent of "Kikyō Shingen Mochi," as well as a rich aroma of roasted coffee. Contrasting this is a clean, dry, and sharp taste without any cloying sweetness. In order to ensure a delicious and authentic alcoholic beverage, brown sugar is added after boiling, and the sugar content is consumed during fermentation. Kinako (roasted soybean flour) is added after fermentation is complete, retaining the aroma, achieving both the flavor and drinkability of "Kikyō Shingen Mochi." Furthermore, with a low alcohol content of 3.5%, it is easy to drink despite its stout style, making it suitable for a wide range of customers, including craft beer fans and Kikyoya fans alike.
"Kikyo Shingen Kuromitsu Black" will be on sale from Tuesday, June 14th at the "Wine Cellar" and "Cafe & Wine Bar Budoshu Ichibankan" in Kofu Station's Celeo, the Kikyoya head office shop, and souvenir shops throughout Yamanashi Prefecture.
