Far Yeast Brewing has collaborated with the Indian brewery BIRA 91 to create Pink Salt & Yuzu Gose, brewed at its Tokyo Brewery in Gotanda, Tokyo. The drink will be available exclusively at the adjacent Far Yeast Tokyo Brewery & Grill starting Saturday, May 28th.
■ Collaboration celebrating the 70th anniversary of the establishment of diplomatic relations between Japan and India
In 2022, Japan and India will celebrate the 70th anniversary of the establishment of diplomatic relations. To mark this milestone year, we have decided to collaborate with the Indian brewery BIRA 91.
Japan has a rich craft beer culture and the market is expanding rapidly. Our company has also achieved significant growth and is currently preparing to build a new factory to increase production. Aiming to create a beer that will set a new standard in the future, we are actively engaging with hop suppliers both in Japan and overseas, conducting extensive research, and continuing to promote our products to the world.
India is also one of the fastest-growing craft beer markets. BIRA 91 is the country's leading craft beer brand, delivering a diverse range of beers to over 500 cities in 15 countries around the world. This collaboration was made possible by the desire to promote cultural exchange between the two countries through craft beer.
This collaboration has been recognized as "part ofthe 70th anniversary of the establishment of Japan-India diplomatic relations" by the Executive Committee Secretariat of the 70th Anniversary of the Establishment of Diplomatic Relations between Japan and India (Embassy of Japan in India) .

Cultural exchange through recipes using each other's local specialties, "Yuzu" and "Himalayan Pink Salt"
This time, we created " PinkSalt & Yuzu Gose ," a gose beer made with Japanese yuzu and Indian Himalayan pink salt . Gose is a beer style brewed through lactic acid fermentation and seasoned with salt and coriander, resulting in a sour and salty taste.
This time, the same gose recipe will be brewed simultaneously at Far Yeast Brewing's Tokyo brewery and BIRA 91's Bangalore brewery. In addition, the chefs of both restaurants will exchange pairing menus, which will be served at their respective restaurants.
This is the first time we have collaborated with an Indian brewery, and also the first time for BIRA 91 to collaborate with a Japanese brewery.
From Japan, we used yuzu tangerine peel, which is used in our regular beer "KAGUA," and from India, we incorporated Himalayan pink salt, India's signature rock salt, into the recipe. Using ingredients representative of both countries, we have created a refreshing gose with a fragrant yuzu aroma, a juicy taste with a pleasant acidity, perfect for early summer.
For one week from Saturday, May 28th to Friday, June 3rd, Far Yeast Tokyo Brewery & Grill will be offering a limited-time pairing menu created by the chef at BIRA 91's taproom, "Shrimp Plancha with Herb Butter Sauce" ( 1,300 yen including tax) , along with PinkSalt & Yuzu Gose .
Additionally, the BIRA 91 taproom in Bangalore will be serving "Yuzu and Black Shichimi Fried Chicken," which uses yuzu, a staple on the menu at Far Yeast Tokyo Brewery & Grill.
