Far Yeast Brewing has collaborated with Kirin Distillery Fuji Gotemba Distillery, a Kirin Group company, to release a limited edition imperial porter aged in whiskey barrels, "Off Trail From the Other Side," on Thursday, June 9, 2022.
■Challenging the crossover of beer and whiskey
"Off Trail" was launched in 2019 as the third brand following "KAGUA" and "Far Yeast." Using the barrel aging method, which involves aging beer in wooden barrels, they utilize microorganisms other than beer yeast to create unique beers with rich and complex flavors.
Up until now, we have mainly produced beers aged in wine barrels, but for this latest release, we have attempted to create a beer using only whiskey barrels. With the recent global popularity of Japanese whiskey, whiskey barrels themselves have become rare, so we have teamed up with Kirin Distillery Fuji Gotemba Distillery in Gotemba City, Shizuoka Prefecture.
In the fall of 2021, we acquired whiskey barrels containing bourbon-style heavy grain malt and Canadian-style medium grain malt that had been used for aging at the Fuji Gotemba Distillery, and used them to brew an Imperial Porter, which was then aged for approximately five months.
Then, in the spring of 2022, members from both parties came together and worked painstakingly to find a combination that would provide the best balance of beer and whiskey flavors from the aged base beer.
■ Imperial porter with aromas of dried plum and raspberry
Barrel-aged imperial stouts and porters are especially popular among beer geeks due to their complex aromas, fragrant malt flavors, and rich body from their high alcohol content, and this style occupies almost all of the top spots on RateBeer, the world's largest beer review site.
It goes particularly well with whiskey barrels, and this time, part of the blend uses a fragrant beer aged in American oak bourbon barrels, which have a particularly high extraction rate of barrel-derived components known as whiskey congeners.
Starting with an Imperial Porter with aromas of baker's chocolate, toffee, and honey, the magic of barrel aging has developed a variety of flavors, resulting in a beer with an unexpected fruity aroma of dried plum and raspberry.
This beer pairs well with light, fragrant desserts such as vanilla ice cream, cheesecake, and mascarpone cheese, and is also recommended as an after-dinner drink.
This is our first collaboration with Kirin Distillery Fuji Gotemba Distillery in Gotemba, Shizuoka Prefecture, located across Mount Fuji from our company in Kosuge Village, Yamanashi Prefecture. The concept of this work is "seeing things from the other side." This is a special bottle that makes use of the unique perspectives of both companies.
"Off Trail From the Other Side" will be released to the general public on Thursday, June 9th, with advance sales starting at 1:00 PM on Tuesday, May 31st on our official online store.
