Far Yeast Brewing Co., Ltd. will be releasing a limited edition of the brand's first plum wine, "Off Trail - Azeotrope Koshu Wine Barrel Aged Plum Wine," from "Off Trail - Azeotrope" (hereinafter "Azeotrope"), which is challenging itself with innovative distilled spirits production, on Tuesday, April 12, 2022. The brand's first plum wine, made with plums from the local village of Kosuge in Yamanashi Prefecture, will be released on Tuesday, April 12, 2022.

Launched in October 2021, "Off Trail - Azeotrope" is a crossover brand between beer and distilled spirits that utilizes the fermentation and barrel aging know-how cultivated through beer brewing to create innovative spirits and liqueurs.
The latest release is the brand's first plum wine, made by steeping plums from Kosuge Village, Yamanashi Prefecture, in undiluted spirits distilled from our regular beer, "KAGUA."
The raw spirit of "KAGUA" is carefully distilled twice in a pot still at Braeckman Distillery, a Belgian distillery with over 100 years of history. The spirit is then transported to Far Yeast Brewing Genryu in Kosuge Village, Yamanashi Prefecture, where it is aged for nine months in red wine barrels (French oak) donated by a winery in Yamanashi Prefecture. It is then infused with plenty of plums harvested in Kosuge Village.

Our company, which has a brewery in Kosuge Village, Yamanashi Prefecture, also moved its headquarters to Kosuge Village in 2020. We are further strengthening our ties with producers and businesses in Yamanashi Prefecture and are actively collaborating with them, such as brewing beer using local products.
The plums used this time were provided by Genryu Mirai, an agricultural NPO that manages plum groves that have become difficult to maintain due to the aging of producers. Genryu Mirai works to revitalize the Kosuge River region, the source of the Tama River, and in 2021, with the cooperation of Genryu Mirai, we will be brewing a beer using plums and blueberries from Kosuge Village under our Off Trail brand. Based on the theme of local production and consumption, we have attempted to make plum wine this time as a product that allows you to taste the terroir of the local Kosuge Village.
A plum wine for adults that offers the rich aroma that only barrel aging can provide.
To maximize the aroma, the plum wine is made by steeping plenty of plums that have been fully ripened after harvest. The plums have a deep, mature flavor that harmonizes the fresh, sour flavor of the plums with the woody aroma of the wooden barrels.
You can enjoy it straight, on the rocks, or with soda, but drinking it straight will bring out the rich aroma of plum and oak. We also recommend drinking it twice.
" Off Trail -Azeotrope Koshu Wine Barrel Aged Plum Wine " will be released to the general public on Tuesday, April 12th, with advance sales starting at 1:00 PM on Tuesday, April 12th on the official online store.
