Far Yeast Brewing Co., Ltd. has collaborated with Ise Kadoya Beer, produced and sold by Nikkenjaya Mochi Kadoya Honten Co., Ltd., to release ``Off Trail #19 Shoyu the Way,'' a beer aged in wooden soy sauce barrels , on Thursday, December 23, 2021, with pre-sales starting at 1:00 p.m. on Tuesday, December 14, on the official online store.

■ Collaboration with Ise Kadoya Beer, which has a tradition of soy sauce production dating back to 1923
"Off Trail" was launched in November 2019 as the third brand following "KAGUA" and "Far Yeast." Utilizing microorganisms other than beer yeast, the brand produces unique beers with rich and complex flavors through barrel aging, which involves aging the beer in wooden barrels.
Off Trail's latest release, "Off Trail #19 Shoyu the Way," is a barrel-aged beer aged in a soy sauce barrel, a first of its kind. This was made possible after we acquired a traditional wooden soy sauce barrel used for brewing soy sauce from Ise Kadoya Beer, a company with a history of brewing miso and soy sauce dating back to 1923. While we have previously brewed a variety of barrel-aged beers using wine and whiskey barrels, this is our first attempt at aging in a soy sauce barrel. It's an experimental beer that truly reflects Off Trail's drive to explore "paths where no path has yet taken us."

■A unique soy sauce barrel-aged beer bursting with flavor
Aging a spicy sour porter in soy sauce barrels resulted in a beer with an unprecedented intensity of umami after just 38 days in the barrel. The resulting beer, then blended with a balanced sour red ale and barrel-aged porter, offers aromas of freshly cut cedar and Cabernet Sauvignon, followed by umami notes of dashi, soy sauce, and dark malt. Further notes include subtle acidity, a gentle earthiness, bourbon notes, and vanilla, resulting in a smooth, pleasant finish. The tannins from the wooden barrels balance the acidity and the beer's flavor, resulting in a unique, elegant, and mysteriously flavorful beer bursting with umami.

■ New Year's event to enjoy "Shoyu the Way" with the brewers at both companies' directly managed stores
In January 2021, a pairing event will be held at both companies' directly managed stores in Tokyo , where customers can enjoy Shoyu the Way with food. The event will be held on Saturday, January 8, 2021, at Ise Kadoya Beer Yaesu Store in Yaesu, Tokyo, and in mid-January at Far Yeast Tokyo Brewery & Grill, Far Yeast Brewing's directly managed store in Gotanda, Tokyo. Both stores will feature a talk session between Ise Kadoya Beer Brew Master Deguchi Zenichi and our head brewer Yanagi Takuya, making it an event where beer fans can fully enjoy craft beer. [About Ise Kadoya Beer]
Founded in 1575 (Tensho 3) next to the dock for boats heading to Ise Grand Shrine, Nikkenjaya Mochi was a rice cake shop catering to worshippers. With a background in miso and soy sauce brewing dating back to the Taisho era, the craft beer brand Ise Kadoya Beer was launched in 1997 with the slogan "From Ise to the World." [What is Off Trail?]

Its name comes from the image of forging ahead on unpaved roads, setting itself apart from the "well-paved roads." The beer is brewed using the barrel-aging method, whereby beer is aged in barrels previously used for wine, sake, and whiskey, in order to develop rich and complex aromas by utilizing microorganisms other than brewer's yeast. The brand explores unique flavors by blending seasonal fruits such as grapes and peaches, as well as regional specialties, to match the characteristics of the base beer.
Recently, "Kriek in the Barrel," which was released in February 2021, won the gold medal at the Asia Beer Championship 2021, a beer competition announced on October 28th, and has received high praise internationally.
