■ Two titles to enjoy "Terroir Kosuge" released simultaneously
Far Yeast Brewing, which moved its headquarters to Kosuge Village, Yamanashi Prefecture, where its brewery is located, in October 2020, has strengthened its ties with producers and businesses in Yamanashi Prefecture and is actively collaborating with them, such as brewing beer using local products. This time, the company will be releasing two limited edition beers, " Off Trail Ume Kaiju" and "Off Trail Blueberry Bridge , " brewed with the theme of "Terroir Kosuge" and utilizing the resources of its local village, Kosuge.
"Terroir" is a word derived from the French word meaning "land," and refers to the unique characteristics of a place, such as soil, climate, and topography. Our brand, "Off Trail," is committed to innovative beer brewing, and we consider terroir, which expresses the land and climate, to be one of the pillars of our approach, and this beer is the first release from "Off Trail."
■ Partnering with businesses in the village that utilize farmland that has become difficult to maintain due to the aging population
In Kosuge Village, the aging of producers is making it increasingly difficult to maintain farmland. This time, we partnered with a local village business that manages such farmland. With the cooperation of Hiroki Aoyagi of boonboon Co., Ltd., who is in charge of managing the plum trees that have become difficult to care for and runs workshops such as "pickled plum making experiences," and the NPO Genryu Mirai, which is cultivating berries and wild bamboo on farmland that is in danger of being abandoned, we used plums and blueberries harvested in Kosuge Village to brew our beer.
■ "Off Trail Ume Kaiju" made with plums
Following on from "Ume-kin'Me Crazy" brewed in 2020, this year our brewery staff, together with the village manager Mr. Aoyagi, harvested approximately 200 kg of plums from the plum grove managed within the village. We took on the challenge of brewing beer using plums from Kosuge Village.
The base beer is "KIWI KAIJU," a salted chocolate caramel porter made with cocoa nibs that was released in limited quantities in April 2020 and aged for 18 months in oak barrels. This beer is then combined with aged and preserved plums and left to steep for several weeks. The wild yeast that lives on the fruit's skin adds further depth to the flavor. The fruity plum aroma blends with complex acidity, and the rich chocolate and caramel flavors of the base beer create an exquisite balance and depth in this plum-aged fruit sour beer. The result is an impactful finish with a completely different personality from last year's "Ume-kin'Me Crazy."

■ "Off Trail Blueberry Bridge" made with blueberries
This barrel-aged sour red ale is combined with fresh blueberries harvested in Kosuge Village and a strong, fruity blueberry puree from the Oregon Fruit Project in Oregon, USA.
After four weeks of fermentation, the resulting beer displays the complexity brought about by wild yeast from the fruit and the unique terroir of Kosuge Village. Its powerful blueberry aroma is complemented by a subtle hint of cherry pie. On the palate, rich fruit flavors of blueberry, strawberry, red currant, raspberry, and blood cherry spread, followed by a multi-layered, funky flavor. The finish is light and dry, with a delightful, fizzy head. This fruity, barrel-aged sour ale serves as a bridge between Oregon and Kosuge Village.

[What is Off Trail?]Launched in November 2019 as a follow-up to the two brands "KAGUA" and "Far Yeast," "Off Trail" is a brand that explores new possibilities in craft beer. Its name comes from the image of forging ahead on unpaved roads, setting itself apart from well-paved roads. The beer is brewed using the barrel-aging method, whereby beer is aged in barrels previously used for wine, sake, and whiskey, in order to develop rich and complex aromas by utilizing microorganisms other than brewer's yeast. The brand explores unique flavors by blending seasonal fruits such as grapes and peaches, as well as regional specialties, to match the characteristics of the base beer.
