Far Yeast Brewing's "Yamanashi Support Project" 7th installment: "Far Yeast Farm to Brew," a fresh hop beer brewed with hops harvested that morning in Hokuto City, Yamanashi Prefecture, will be available for a limited time from Saturday, September 18th.

Far Yeast Brewing Co., Ltd. (Kosuge Village, Yamanashi Prefecture, CEO: Shiro Yamada), a craft beer maker that distributes original Japanese beers to the world, will release "Far Yeast Farm to Brew," which uses fresh hops from Hokuto City, Yamanashi Prefecture, on Saturday, September 18th, and will begin accepting pre-orders from 1:00 PM on Tuesday, August 31st.

Hops are harvested in the fields in the morning during the height of summer and added to the brewing kettle on the same day. This is a special beer that can only be enjoyed at this time of year, with a focus on freshness.

The seventh installment of the Yamanashi Support Project, which aims to liven up Yamanashi with beer, is "Far Yeast Farm to Brew," which uses fresh hops from Kobayashi Hop Farm, a hop farm in Hokuto City, Yamanashi Prefecture.

In some parts of the United States, hop fields are located very close to breweries, so when hop harvest season comes around, fresh hop beer is brewed using the harvested hops on the same day.

Hops begin to deteriorate the moment they are harvested, so they are usually dried to allow for long-term storage. This allows them to be used in beer brewing with consistent quality all year round, but because heat is applied, some of the aromatic components inevitably evaporate. Even when brewing beer with fresh hops without drying, frozen hops that are frozen immediately after harvest are often used, as the areas where hops are currently grown are limited in Japan.

This time, Far Yeast Brewing tried their hand at brewing fresh hop beer for the first time, using fresh hops harvested that morning and added to the brewing kettle on the same day. This beer brewing was only possible because the hop farm and brewery are both located in Yamanashi.

■Uses freshly harvested hops from Kobayashi Hop Farm in Hokuto City, which is working to revitalize hop cultivation

Hokuto City, Yamanashi Prefecture, at the southern foot of Mt. Yatsugatake, is where full-scale hop cultivation began in Japan for the first time. However, the number of hop farmers in the prefecture is currently on the decline. Yoshitoshi Kobayashi of Kobayashi Hop Farm is working to spread the appeal of hops and cultivate hops in Hokuto City, with the aim of reviving and revitalizing the industry.

In late July, brewery staff also visited Kobayashi's farm in Hokuto City early in the morning to help with the harvest, harvesting 40kg of hops over the course of about four hours. In the early afternoon, the fresh hops were transported to the Source Brewery where the brewing team was waiting, and the flowers were broken down by hand one by one to effectively extract the aromatic components, before being placed directly into the brewing kettle.

  • A fragrant and light-tasting Kolsch style  "Far Yeast Farm to Brew" is a fragrant, refreshing, and easy-to-drink Kolsch-style beer, designed to allow you to simply enjoy the aroma and flavor of fresh hops. Aiming for a classic Kolsch style, the malt blend is Pilsner Malt, Carapils Malt, and wheat. The German hop Merkur is used in small amounts for bittering, but the rest of the hops are all from Hokuto City. The two varieties used this time are Sorachi Ace, which has a distinctive aroma reminiscent of cedar, cypress, and lemongrass, and Sterling, which has a refreshing, mild bitterness. Enjoy the refreshing, drinkable flavor of malt and hops with a fruity taste. "Far Yeast Farm to Brew" will be available for general sale from Saturday, September 18th, and pre-orders will begin on our online store from 1:00 PM on Tuesday, August 31st. Kobayashi Hop Farm is a hop farm located in Hokuto City, Yamanashi Prefecture, at the southern foot of Mt. Yatsugatake, a pioneering area for hop cultivation. Far Yeast Brewing's "Yamanashi Support Project" began in July 2020 with the desire to revitalize local industry through brewing beer using local produce.
