As a special edition of the "Yamanashi Support Project," which aims to liven up Yamanashi Prefecture with beer, we have collaborated with "hayari," a natural sausage from Uenohara City, Yamanashi Prefecture, to begin selling food pairing sets with Far Yeast Brewing's classic beer exclusively on our online store.
Far Yeast Brewing launched the "Yamanashi Support Project" in July of this year to promote Yamanashi Prefecture, where the brewery is located, through beer amid the ongoing difficulties caused by the COVID-19 pandemic. To date, the company has collaborated with producers in the prefecture to release original beers made with peaches and grapes grown in the prefecture, as well as plums from the local village of Kosuge.
As a special edition of the "Yamanashi Support Project," we've collaborated with "hayari," a sausage manufacturer and restaurant in Uenohara City, Yamanashi Prefecture, to create a food pairing set of natural sausages and beer. This limited-edition set, available exclusively through the Far Yeast Brewing online store, includes "Kosuge Himalayan Oyster Mushroom Sausage" and "Kosuge Miso Sausage," specially made for this project using ingredients from Kosuge Village, where the brewery is located. ■ "Hayari" - a natural sausage that doesn't rely on chemical seasonings
"hayari" sausages are "natural sausages" made without relying on chemical binders, coloring agents, preservatives, or amino acids. Craftsmen handcraft each sausage in their own workshop using meat, vegetables, and grains. The sausages are "delicious enough to please the body," born from the natural flavor of the ingredients and meticulous techniques. They are made by Takeshi Murakami, a "sausage researcher" who appears in the media and writes about them.
■ "Hayari & Far Yeast" Special Set
This set includes four 100g "hayari" sausages and four bottles of Far Yeast Brewing beer, which are perfectly paired with each sausage. <Kosuge Himalayan Oyster Mushroom Sausage x Far Yeast "Genryu White">
This sausage is made from slow-roasted Himalayan oyster mushrooms from Kosuge Village, then marinated in pork for three days to maximize its flavor. It's paired with Genryu White, a dry, sharp beer with a fruity aroma and refreshing hop aroma.
<Weisswurst x Far Yeast "Genryu Blonde">
Weisswurst uses mountain yam instead of a binder, giving it a fluffy texture and gentle flavor.We recommend Genryu Blonde, which has a light and refreshing taste thanks to its generous use of fragrant hops.
<Coarsely ground Savory x Far Yeast "Genryu IPA">
This coarsely ground sausage, heavy and ham-like with a rich salty flavor, is made using sevoli, a herb native to the Mediterranean coast. Enjoy it with Genryu IPA, which features the gorgeous aroma and bitterness of Belgian yeast and American hops.
<Kosuge Miso Sausage x "KAGUA" Rouge>
This sweet and spicy frankfurter is made with miso from Kosuge. The perfect match for the rich sausage is KAGUA's "Rouge," a rich and flavorful beer made with roasted malt and plenty of spicy Japanese pepper.
