In July 2018, we collaborated with Tomas Sluiter, owner and head brewer of Culmination Brewing, a popular brewery in Portland, USA, to create "Kriek in the Flesh," a fruit sour fermented using the kettle souring method with tart cherry juice. A portion of this sour was then aged in red wine barrels, and cherry juice and wild yeast were added to create "Kriek in the Barrel." Its vibrant ruby color boasts a fruity aroma, a subtle sweetness, and the distinctive acidity of American cherries, but a dry finish. The wild yeast enhances the fruitiness, while the layered acidity blends beautifully.
