Far Yeast Brewing Introduces Flagship Series in Cans!

Far Yeast Brewing Co., Ltd. (Head office: Shibuya-ku, Tokyo, President: Shiro Yamada), a craft beer brewery brimming with original beers distributed to the global market, canned their flagship series, Tokyo Blond, Tokyo White, and Tokyo IPA, in-house for the first time. The beers were released to the Japanese market at the beginning of April, 2020. 

In the Japanese craft beer industry, it is still common that smaller size breweries outsource beer brewing and canning to a larger contract brewery who already has canning equipment. However, we decided to install a can filling system of our own to package canned beer on site in Kosuge Village, Yamanashi Prefecture. The result: a full-scale entry into the canned beer market to expand our sales channels and bring our products to more beer fans. To start, we’re canning our flagship beers, Tokyo Blond, Tokyo White, and Tokyo IPA, but look out for new products in the near future.

The aluminum can package for craft beer is now very common in the United States and other countries that have advanced craft beer culture because the aluminum can package has multiple advantages for beer’s shelf stability and environmental impact. Shelf stability increases because of the can’s opacity compared to other packaged types – important flavor compounds contributed to the beer by hops are altered negatively by the presence of light, producing a “skunky” off flavor in the beer. Additionally, the cans’ reduced weight and more efficient space occupation increases transportation efficiency, decreasing the carbon footprint needed to move beer from brewery to customer as compared to glass. In Japan especially, the recycling rate of aluminum cans is over 90%※. So, aluminum cans are the most sustainable way to package beer.  

What makes this canned Far Yeast series special compared to the other canned beer is that the beer is can-conditioned, also known as “can re-fermentation.” After the primary fermentation, a little extra sugar and yeast are added before the liquid is sealed in the can. As a result, the trapped CO2 produced by fermentation creates a soft, silky carbonation in the beer, enriching the flavor. Also, the oxygen remaining in the aluminum can is metabolized during the re-fermentation process, reducing the risk of beer oxidation and maintaining long-term quality, and extending the beer’s shelf life to 12 months.

The simple and stylish package design expresses Tokyo with a sophisticated quality and a lively feeling that keeps evolving every day. The easiest way to differentiate the products is by the can’s color: golden for Tokyo Blond, refreshing light blue for Tokyo White, and hops green for Tokyo IPA.  The right-pointing arrows indicate the direction of Tokyo as seen from Europe, the center of beer culture. We will keep creating new value by sending beer full of originality from Japan to the world for customers to enjoy.

Far Yeast Brewing launches the new brand “Off Trail” The first release is the barrel-aged beer “Ginspiration”

Far Yeast Brewing Co., Ltd. (Head office: Shibuya-ku, Tokyo, President: Shiro Yamada) unveils a new brand  today: “Off Trail.” The first product, “Ginspiration,” will be released on the market on Thursday, November 14th. 

Barrel-Aged beer is beer has been aged for a period of time in a wooden barrel much like wine. In addition to the flavor and aroma contributions of the wood, wild  yeasts further ferment the beer, resulting in an elegant product that surpasses a standard beer’s complexity. Base beer, yeast and bacteria, fruit and spices, and barrel selection all work together to create a unique combination of flavors through the aging process. Although originating in Europe, Barrel-Aged beers are now appreciated by craft beer consumers the world over, especially in the United States.

To craft “Ginspiration,” juniper berries*, commonly used for making gin, were steeped in the beer after barrel aging. Fusing the herbal aroma of juniper berries and the base beer’s citrus peel bitterness deepened the beer’s flavor and produced a gin-like aroma. The beer pairs well with sunomono and salmon, pungent cheese, or shrimp and pork dumplings. “Ginspiration” will be released to the market starting Thursday, November 14th in 750ml bottles and on draft at “Far Yeast Tokyo Craft Beer & Bao” in Shibuya, Tokyo as well as other taprooms around Japan. * What is Juniper Berry?

A juniper berry is the female seed cone produced by the various species of junipers. It has a herbal aroma, moderate bitterness and spicy flavor. Juniper berries are commonly used as a spice, particularly in European cuisine, and also gives gin its distinct flavor.

Limited brew Far Yeast Peach Session

We are proud to announce that our special limited brew, Far Yeast Peach Session, will be released on August 8th. This environmentally friendly fruit session ale fits the summer season perfectly!

We used 430kg of locally harvested Peaches, picked the day just before brewing. Although the fruit was deemed “too ugly” for commercial sale, they were still packed with fresh sweet peach flavour. Rather than throw such good fruit to the compost heap, we decided to use them to create a wonderful fruit session ale.

Our brewery team spent five hours painstakingly cleaning and puréeing the fruit to be added to the boil. Please enjoy the photos below to get an idea of the process!

These delightful peaches came to us from “Peach Senka Yamashita” (Head office: Yamanashi City, Yamanashi Prefecture, Representative Director: Ichiko Yamashita).
In addition to cultivating fruit, Peach Senka Yamashita runs a well-known cafe, “La Casa Della Pesca,” in Yamanashi City.

We also used their peaches to create other limited brewing products such as “Far Yeast Peach Brut” (released on March 2019).

Peach Senka Yamashita uses organic farming methods to bring out the fruit’s best natural taste spontaneously.

Through collaborations like this one, we will continue to challenge ourselves to create new and interesting products that will delight a wide variety of customers.

Kagua Debuts in Canada and Vietnam

Far Yeast Brewing Company is pleased to announce that its premium craft beers, including the flagship Japanese scented ale Kagua, will be available for purchase in Canada and Vietnam.

In Canada, Metropolitan Premium Wines & Sakes is exclusively representing Kagua, with sales already underway. The purveyor of high-quality wine and sake mainly operates in Canada’s most populist province Ontario, which is also the nation’s political and economic center. Thanks in part to its proximity to the leading global craft beer market of the United States, Canada boasts a large number of microbreweries and a strong craft beer culture. However, Japanese craft beers have yet to be introduced into the market so interest and demand are high.

Meanwhile, following the launch in Canada this summer, Kagua is expected to be available for purchase in Vietnam from this September. With the Southeast Asian nation’s recent economic growth, Vietnam has been attracting attention not only as a production center but also as a market for consumption. This can be seen in the spreading of food trends throughout the nation that originated in Europe, the United States and Japan, as well as craft beer’s growing popularity. Beer has long been popular in Vietnam, but the demand for craft beer has been increasing of late, in large part thanks to local Western expat communities.

In Vietnam, Far Yeast Brewing Company will work with 6 Drunk Men, which is headquartered in Ho Chi Minh City. The company is a major importer in Vietnam, having established a solid customer base in Ho Chi Minh as well as Hanoi. Sales of Kagua in the country will start in Ho Chi Minh and will be expanded to Hanoi at a later date.
