■We're adopting Soldam this year!
"Far Yeast Sumomo Salty Sour" is a fruit gose made with "Soldam" plums from Kikushima Seiyodo East Branch, a plum farm in Fuefuki City.
Of the six varieties of plums that are harvested every year in a relay style, we picked "Soldam," which has bright red flesh when ripe and is characterized by its strong acidity, and added a generous 400kg of them to the beer.

■An exquisite balance of juicy fruitiness and saltiness!
By adding Soldam to the beer with the skin on, the finished product has an even stronger plum flavor.
The yeast used is Philly Sour, which is characterized by its sourness and stone fruit aroma, further enhancing the plum flavor.
To this, we add salt, a characteristic of fruit gose, creating an exquisite balance of juicy fruitiness and saltiness, and with an alcohol content of just 4.5%, it's a drink you'll want to drink again and again.

■Kikushima Seiyodo East Branch "We believe that plums are an integral part of Yamanashi's culture. If the plum fields were to fall into disuse, one of the livelihoods that our ancestors have built for generations would be lost. We didn't want to let that happen," and so we started in Sakaigawa, Fuefuki City. His family home in Kofu City, Yamanashi Prefecture, is a wholesale sweets store called "Kikushima Seiyodo." As Fuefuki City is located east of Kofu, we named our store "Kikushima Seiyodo East Branch."
