■The challenge was to bring out the best in the base beer, which has a strong vinegary flavor due to its long-term aging.The base beer blend for ``Forbidden Land'' is Sour Blonde Ale, aged for 20 months, and Wheat Strong Ale, aged for 15 months.
The Blonde Ale is selected for its vinegar-like acidity with hints of apple. To add depth and complexity to the body, it is paired with a Wheat Strong Ale aged in a cinnamon-flavored barrel and a oak-rich barrel. Finally, apple puree is added to create a juicy finish.
The soft flavors of apple and cinnamon are intricately intertwined with the spiciness of vinegar and oak tannins.
