Our first collaboration with the up-and-coming brewery, Totopia Brewery!
The psychedelic Barrel Aged Sour Ale combines Off Trail's funky sour with Totopia Brewery's fruity techniques.
-Brewer's note-
Sour ale + fruit + dry hopping is a commonly used technique, but it is in this that Off Trail's unique style is found.
A blend of a complex sour blonde ale aged for 23 months, a spiced rye sour ale infused with orange peel and star anise and aged for 11 months, and a wheat strong ale that balances the overall body.
The fruit used is a puree of two types of fruit, pink guava and peach, and the beer is dry-hopped with Citra and Nectaron hops to achieve a citrus and tropical character.
The beer is made with fruit puree and the yeast that Totopia Brewery uses regularly is added.
This sour and funky barrel-aged beer is combined with fruit and hop elements to create a complex, psychedelic atmosphere.
