Far Yeast Brewing will be releasing a limited edition " Off Trail -Azeotrope Dew of Bergamot" from its brand "Off Trail - Azeotrope" (hereinafter "Azeotrope"), which is challenging itself with innovative distilled spirits production, on Wednesday, February 22, 2023. Off Trail -Azeotrope Dew of Bergamot is a craft gin made from discarded beer.

"Off Trail - Azeotrope" is a crossover brand of beer and distilled spirits that utilizes the know-how of fermentation and barrel aging (wooden barrel aging) cultivated through beer brewing to take on the challenge of creating innovative spirits and liqueurs.

This time, beer that was going to waste, such as products approaching their expiration date, was upcycled into gin after being distilled twice in a pot still. Bergamot is used as the main botanical. The soft sweetness from the malt in the raw spirit and the citrus bitterness of bergamot complement each other, creating a gorgeous and refreshing craft gin that evokes the arrival of spring.

This product was originally distilled for barrel aging, but when we tasted the unaged spirit, we found that it had an excellent balance of botanicals and raw spirit, so we decided to quickly release a portion of it as a limited edition New Pot.

The pot distillation method used in "Off Trail - Azeotrope" preserves the flavor of the ingredients, highlighting the individuality of the raw liquor. This allows you to enjoy the exquisite harmony of the raw liquor and botanicals. This product truly embodies the unique characteristics of "Off Trail - Azeotrope".

Enjoying it with soda water enhances the aroma, allowing you to fully experience the unique characteristics of the malt from the original spirit and the bergamot added as a botanical.

" Off Trail -Azeotrope Dew of Bergamot " will begin shipping on Wednesday, February 22nd, and pre-orders will begin on the official online store from 1:00 PM on Tuesday, February 14th.
