The first flower-infused beer in the "Off Trail" series, "Off Trail Whispers on the Wind," with the ephemeral scent of lavender and red clover, will be released on Wednesday, July 6th.

Far Yeast Brewing will release "Off Trail Whispers on the Wind" from its brand "Off Trail," which challenges innovative beer brewing, on Wednesday, July 6, 2022.

"Off Trail" was launched in November 2019 as the third brand following "KAGUA" and "Far Yeast." Utilizing microorganisms other than beer yeast, the brand produces unique beers with rich and complex flavors through barrel aging, which involves aging the beer in wooden barrels.

This is the 25th release in the "Off Trail" series and the first to feature flowers. It's a sour ale made with a kettle-soured blonde ale as the base beer, infused with delicately scented dried lavender and red clover flowers. The base beer, a sour blonde ale, was barrel-aged, giving it a floral aroma, so we chose dried flowers as a secondary ingredient to make the most of this characteristic. By using red clover, which is also widely used in honey production, we aimed to bring out the flavor of "lavender honey" without using honey itself.

The base beers are barrel-aged using wild yeast, and each one has a strong personality depending on the environment inside the barrel, so no two beers will be the same. This experimental beer is truly "Off Trail"-like, taking advantage of the unique flavors that can only be discovered after aging.

The beautiful yet ephemeral scent of dried flowers, lavender and red clover, complemented by hints of orange peel, cherry blossom, rich fruit peel, and spicy apple cider, creates a delicate aroma that's like a whisper on the wind. On the palate, you'll also experience the spice and berry flavors of the wooden barrels used for blending and aging. This is a drink we recommend you close your eyes, calm your mind, and enjoy.

[What is Off Trail?]
