Far Yeast Brewing Co., Ltd. will release "Far Yeast DOBUROKU Wheat Ale," a wheat ale inspired by doburoku sake, in collaboration with WAKAZE Co., Ltd., a sake maker that operates the Craft Sake Brewery "Sangenjaya Brewery" in Setagaya Ward, Tokyo, on Saturday, March 26, 2022.
■The second collaboration with WAKAZE, a craft sake maker
This marks the first mutual collaboration between us and WAKAZE, which produces a wide variety of sake with the aim of making Japanese sake a global drink. In the first collaboration, we provided the technology to brew " Sanchasumisake Anko Stout, " a sake inspired by the beer style "stout, " at the WAKAZE Sangenjaya Brewery, which was released by WAKAZE on February 16th. For this second collaboration, we used the white koji used at WAKAZE to brew a beer incorporating the style of sake at Far Yeast Brewing's Genryu Brewery.
This collaboration between sake and beer transcends the boundaries of genres, bringing even more diversity and freedom to the appeal of alcoholic beverages.
■ Smooth mouthfeel and refreshing ginjo aroma created by sake yeast
The ingredients used are "Tsuyahime (rice)" and "white koji" which are used by WAKAZE. This collaboration has made it possible for the brewer to create a beer using koji that he had long wanted to try. The result is a wheat ale that is reminiscent of doburoku, one of WAKAZE's most memorable products.
The malt used is high in wheat, resulting in a smooth mouthfeel. This is the first time we've used "Yeast No. 9," which is used in many ginjo sake breweries. Unlike the hop-heavy beers like the Hazy IPAs that are currently popular in the craft beer scene, this wheat ale features a gentle ginjo aroma that makes the most of the sake flavor, blended with the wheat flavor for a refreshing aroma.
"Far Yeast DOBUROKU Wheat Ale" will be released to the general public on Saturday, March 26th, with pre-sales starting on Tuesday, March 22nd on the online store .
To commemorate the collaboration with WAKAZE, in April, WAKAZE's directly managed experiential restaurant "WAKAZE TOKYO" and Far Yeast Brewing's directly managed store "Far Yeast Tokyo Brewery & Grill" will begin offering special pairings that allow you to enjoy "Sancha Sumisake Anko Stout" and "DOBUROKU Wheat Ale" with food that complements each beer.
