Far Yeast Brewing , in collaboration with Hop Kotan Brewery in Kamifurano, Hokkaido, will release the fruit sour IPL " Far Yeast Paykar Sour IPL" to the general public on Saturday, March 26, 2022, with pre-sales starting at 1:00 PM on Tuesday, March 15 on the official online store.

■ First collaboration with Kubota Kotan Brewery

We have had a long-standing relationship with Takayuki Tsutsumi, the representative of Kutsukotan Brewery, and had planned to have him serve as an advisor when we established Genryu Brewery. In the fall of 2016, while preparing to establish the brewery, we held a camping event in Kosuge Village, Yamanashi Prefecture, where we discussed the idea of ​​"making beer together." However, construction delays meant that the timing was missed and it didn't come to fruition at the time, but five years later, our first collaboration has finally come to fruition.

■Trying out "Sour IPL," which is rarely available on the market

We brewed our first lager-style beer in 2021, and wanted to take that experience and further perfect lager brewing. For this collaboration, we chose the sour IPL (India Pale Lager) style as a new challenge to create a lager, incorporating the recipe structure and brewing techniques of Kubota Kodan's clean lager beer.
While sour IPA (India Pale Ale) has become increasingly popular in recent years, there are very few sour IPLs brewed with lager yeast on the market. This is because lager yeast is delicate and it is very difficult to achieve sourness by hybridizing it with other yeasts.

"Far Yeast Paykar Sour IPL" uses plenty of Haskap hops from Furano and Cascade hops from Kamifurano, both of which are used in Kutsukotan Brewery's regular products. The result is a fruit sour IPL with a rich single-hop aroma and a clean, refreshing taste.

"Paykar" means "spring" in the Ainu language. The sourness of haskap and its vibrant pink color make this the perfect drink for the coming season, as it brings to mind the coming of spring.
