Far Yeast Brewing Co., Ltd. (Kosuge Village, Yamanashi Prefecture, CEO: Shiro Yamada), a craft beer maker that distributes original Japanese beers worldwide, is brewing a limited edition "Far Yeast Peach Haze" using peaches from "Peach Senka Yamashita" (Yamanashi City, Yamanashi Prefecture, CEO: Kazuhiro Yamashita), a peach farmer in Yamanashi City, Yamanashi Prefecture, as part of the sixth installment of the "Yamanashi Support Project," which aims to promote Yamanashi through beer. The product will be available for general release on Friday, August 27, 2021, with pre-orders opening on the online store from 1:00 PM on Tuesday, August 17.

■ "Peach Haze," which sold out immediately last year, is back!

The Yamanashi Support Project was launched in July 2020 with the desire to revitalize local industry through brewing beer using local produce. In October, the company moved its headquarters from Shibuya to Kosuge Village, Yamanashi Prefecture, where the brewery is located, further deepening collaboration with producers and businesses within the prefecture. To date, the company has released five types of beer, including "Ume-kin' Me Crazy!", which uses plums from Kosuge Village, where the brewery is located; "GRAPEVINE," which uses grapes from Nirasaki City; and "Omoiro Tomato Ale," which uses tomatoes from Hokuto City. The company has been promoting the appeal of Yamanashi through its beer.

This sixth installment is a re-brewing of "Far Yeast Peach Haze," the first product of the project released last year, using peaches harvested this year. This popular product sold out immediately at the pre-order stage last year, so a re-brew was quickly made, and is now available again.

■Peach Specialty Yamashita's peaches are used generously

Following on from last year's "Peach Haze" and this May's "Peach Flower Weiss," this new drink uses peaches from "Peach Senka Yamashita," the peach farmer who runs the popular Yamanashi City cafe "La Pesca." These peaches are rejected from the general market due to cosmetic issues and other reasons.
The "Peach Senka Yamashita" farm is located on a southern slope overlooking the Kofu Basin, and in this ideal environment where the farm receives plenty of sunlight, they cultivate delicious peaches using specialized farming methods that make the most of the power of nature. This year, they used "Hakuho," a variety that represents Yamanashi. This popular variety is characterized by its low fiber content and juicy freshness.
The introduction of a juicer that can extract the juice thoroughly has improved work efficiency, and this time we were able to prepare two batches at once using a total of 1,000 kg of peaches.

■An improved recipe allows you to enjoy the texture of freshly picked peaches even more.  "Far Yeast Peach Haze" is a hazy-style fruit pale ale made with plenty of freshly picked peaches. The hops used are "El Dorado," which has a stone fruit aroma, and "Mosaic," which has a tropical aroma. These two types of hops further enhance the peach aroma. We've made some changes to our brewing process since last year. Last year, we froze the peaches we harvested to destroy the fibers before pureeing them, but this year, we're using a low-fiber variety, so we're processing the freshly picked peaches directly into juice. Furthermore, by adding the juice twice, once during brewing and once at the end of fermentation, the peaches are thoroughly blended into the beer, resulting in a finished product that makes the most of the juiciness of the fresh peaches, the rich mouthfeel, and the natural peach aroma. We've used less oats than last year, which are often used in hazy IPAs to thicken and cloud the beer, allowing you to enjoy the natural thickness of the peaches even more.

Drinking it well chilled brings out the refreshing sparkle of peach cider, and as the temperature rises, the aroma opens up and the sweet aroma spreads. You can enjoy a variety of flavors with just one bottle as the temperature changes.

"Far Yeast Peach Haze" will be available for general sale from Friday, August 27th, and pre-orders will begin on our online store from 1:00 PM on Tuesday, August 17th.
