Far Yeast Brewing, a brand that challenges itself with innovative beer brewing, will be releasing a limited edition beer called "Off Trail STARLESS SKY" on Wednesday, January 29, 2025. This is the second collaboration between Far Yeast Brewing and the up-and-coming brewery Totopia Brewery (headquarters: Nagakute City, Aichi Prefecture, CEO: Junya Morita) .

■Aged for 8 months in bourbon barrels, blended with vanilla and hazelnuts The first collaboration, ``Off Trail Funkphobia,'' was a barrel-aged beer made with fruit, while the latest collaboration, ``Off Trail Starless Sky,'' is an imperial stout aged for 8 months in bourbon barrels.
It uses plenty of vanilla beans and also contains hazelnuts, giving it a sweet chocolate-like taste, while still having a rich, well-balanced finish that doesn't make you feel the alcohol content.

"Off Trail" was launched in November 2019 as a brand that challenges new possibilities in craft beer. Using microorganisms other than beer yeast, they create unique beers with rich and complex flavors by using a barrel-aging method in which the beer is aged in wooden barrels. The end result changes depending on the barrel and the environment in which it is aged, so the appeal is that no two beers are the same, resulting in a unique, once-in-a-lifetime flavor.

Our brewery's barrel room always has around 80 barrel-aged beers stored, and we select and blend the best combination of barrels each time to create our final product.
Even barrels that are too stimulating or unique on their own are blended with other beers, and sometimes combined with fruits, herbs, spices, etc., to add depth and complexity, aiming for a well-balanced overall finish.

"Off Trai Starless Sky" will begin shipping to beer bars, restaurants, and liquor stores nationwide from Friday, January 31st, and will be available on the Far Yeast Brewing official online store from Thursday, February 6th.
