Far Yeast Brewing will be releasing the fifth product in its authentic barrel-aged malt gin line, "Off Trail -Azeotrope Malt Gin Distiller's Choice" (hereinafter "Distiller's Choice"), "Off Trail -Azeotrope Malt Gin Distiller's Choice "epsilon"" (hereinafter "epsilon"), in limited quantities from Tuesday, August 20, 2024.

"Distiller's Choice" is a genuine barrel-aged malt gin series launched in March 2023 by "Off Trail -Azeotrope," a brand challenging itself to create innovative distilled spirits. Beer-based spirits are aged in multiple barrels, and the distiller himself tastes each one, considering the type of blend and composition before selecting the barrels to be used for the final product. This line is symbolic of the brand's theme of "once in a lifetime."

The fifth in the series, "epsilon," is blended with the theme of "balance built on delicacy." The main ingredient is a 14-month-aged gin with floral botanicals, blended with a small amount of a shorter-aged gin with spice and herb characters, resulting in a barrel-aged gin with an exquisite balance of the flavors of the delicate ingredients.
Distiller's Choice has previously incorporated many of the distinctive flavors of wooden barrels, but this time we focused on another aspect of aging: the change in botanical flavor.

This floral gin is aged for 14 months, and after that, the hidden lavender, chamomile, and cranberry characters come to the forefront, with a finish reminiscent of ripe jungle spices, with hints of cardamom, hibiscus, and rosehip. Adding oregano to the gin adds a touch of bitterness and astringency, resulting in a multi-layered flavor with a delicate balance of the unique characteristics of the many spices and herbs.

"Off Trail - Azeotrope Malt Gin Distiller's Choice "epsilon"" will be available for purchase in limited quantities on the Far Yeast Brewing official web store from 12:00 on Tuesday, August 20th. Purchases on the web store and shipments to restaurants and liquor stores nationwide will begin sequentially from Wednesday, August 21st.

"Distiller's Choice" was launched in March 2023 as a series of wooden barrel-aged malt gin, which is the brand's signature. Like the brand "Off Trail," which makes use of microorganisms in its beer brewing, this is a one-of-a-kind product in which the distiller himself tastes each of the distilled spirits that have been aged in multiple barrels, deciding the blend ratio before turning them into a finished product.
