Far Yeast Brewing will begin selling a limited quantity of "Far Yeast Sumomo Salty Sour" made with plums from Kikushima Seiyodo East Branch, a plum farm in Fuefuki City, Yamanashi Prefecture, on Tuesday, August 6, 2024.
■From "Brewed With Yamanashi," which showcases the charm of Yamanashi, comes the first fruit gose made with plums!
"Far Yeast Sumomo Salty Sour" is a fruit gose made with "Oishi Wase" plums from the Kikushima Seiyodo East Branch, a plum farm in Fuefuki City. Of the six plum varieties harvested annually in a relay format, "Oishi Wase" is the earliest harvested, and is harvested at full ripeness. A generous 400kg of plums, including non-standard varieties that account for approximately 20% of the total harvest, are used in this beer.
■The Oishi Wase variety used in "Sumomo Salty Sour," a fruit gose with the refreshing acidity and sweet aroma of plums, is a standard variety of plum with a recognizable taste and aroma. By adding the Oishi Wase to the beer with the skin on, we were able to maximize the aromatic compounds found in the skin. In addition, to bring out the refreshing acidity of the plums and the sweet fruit aroma, we used the Philly Sour yeast, which is characterized by its acidity and stone fruit-like aroma. By adding salt, a characteristic of gose beer, we have created a fruit gose with a light taste that is perfect for midsummer.
Far Yeast Sumomo Salty Sour will be available in limited quantities on the Far Yeast Brewing official web store from 12:00 on Tuesday, August 6th. Purchases on the official web store and shipments to beer bars, restaurants, and liquor stores nationwide will begin sequentially from Wednesday, August 7th.
"Brewed with YAMANASHI" will continue to collaborate with producers and businesses in the prefecture to deliver beer made with a variety of ingredients, thereby promoting the local Yamanashi region.
