Far Yeast Brewing will begin selling a limited quantity of plum wine, "Off Trail - Azeotrope Yoinotsuki Kosugemura Umeshu 2024," made with plums from the local village of Kosuge in Yamanashi Prefecture, from its brand "Off Trail - Azeotrope," which is challenging itself with innovative distilled spirits brewing, on Wednesday, July 24, 2024.

Barrel-aged plum wine made from upcycled Ross beer
Launched in October 2021, "Off Trail - Azeotrope" is a crossover brand between beer and distilled spirits that utilizes the fermentation and barrel aging know-how cultivated through beer brewing to create innovative spirits and liqueurs.
Last year, the brand released its first plum liquor, "Koshu Wine Barrel Aged Plum Liquor," made by steeping plums from Kosuge Village, Yamanashi Prefecture, where the brewery is located, in undiluted spirits distilled from Ross Beer. The limited number of units sold out within a day. Due to the positive reception, this year we will be selling an upcycled barrel-aged plum liquor made with plums from Kosuge Village again.
■Mellow and complex aroma from Kosuge Village plums and barrel aging
This latest release is a version of Yoi no Tsuki - Kosugemura Umeshu 2023, released last year, aged in oak barrels for one year and three months. The aging process mellows the sake, and it also has a woody aroma and astringency derived from the barrel, resulting in a more complex flavor.
As with last year, the main botanical is the Taiwanese spice margao. The rich aroma of plum is followed by a citrus and unique refreshing sensation, and the sweetness of malt gives a mellow aftertaste, making this a product that can be enjoyed in a variety of flavors in one sip.
" Off Trail -Azeotrope Evening Moon Kosuge Village Plum Wine 2024" will be sold at Kosuge Village's "Kosuge Roadside Station," as well as restaurants and liquor stores in and outside the prefecture.
