Far Yeast Brewing, a brand that challenges itself with innovative beer brewing, will be releasing a limited edition beer called "Off Trail Funkphobia" on Tuesday, April 30th, 2023, in its first collaboration with the up-and-coming brewery Totopia Brewery (headquarters: Nagakute City, Aichi Prefecture, CEO: Junya Morita).
■ Off Trail's funky sour meets Totopia Brewery's fruit technology Off Trail is a brand that is challenging new possibilities for craft beer, and they use microorganisms other than beer yeast to create unique beers with rich and complex flavors using a barrel-aging method that involves aging the beer in wooden barrels.The finished product changes depending on the barrel and the environment in which it is aged, so no two beers are exactly alike, making for a unique, one-of-a-kind flavor.
Now in its fifth year since launching, Off Trail is actively promoting the appeal of barrel-aged beer to beer fans, participating in beer festivals and tap takeovers at beer bars, primarily in Tokyo, as a standalone brand, rather than as "one of Far Yeast Brewing's brands." It was during this time at the 2022 Shizuoka Craft Beer & Whisky Fair that the brand met Totopia Brewery's CEO, Mr. Morita, and head brewer, Mr. Eugene, at neighboring booths. Project leader Aoki, enthralled by their sour ales and techniques utilizing fruit purees, sent them a love call, leading to this collaboration. The two brewers visited the brewery 's head brewery, where they tasted the base beer and decided on the blending together. They then designed the product with Eugene's advice on how to use fruit purees.
■ Fruit puree makes barrel-aged beer super funky
The brewing method used this time is a commonly used combination of sour ale, fruit, and dry hops, but we found something uniquely Off Trail-like in it. We aimed to create a sour, funky barrel-aged beer with a psychedelic atmosphere that is even more complex as the fruit and hop elements blend together.
This beer is a blend of a complex 23-month-aged sour blonde ale, a 11-month-aged spiced rye sour ale infused with orange peel and star anise, and a wheat strong ale to balance the overall body. Two types of fruit puree, pink guava and peach, were used, and dry-hopped with Citra and Nectaron hops to achieve a citrus and tropical character. Totopia Brewery's signature yeast was added to the fruit puree-infused beer. The tropical flavor of the puree is intricately intertwined with funkiness and acidity, resulting in a psychedelic finish, just as intended.
On the same day, Totopia Brewery will release a product called " Funkphilia," a blend of spiced rye sour ales that have been aging on the Off Trail side .
Please also take note of the contrasting names " Funkphilia" and " Funkphobia" and the label designs that link together the worldviews of each brewery.
"Off Trai Funkphobia" will be available for purchase in limited quantities on the Far Yeast Brewing official web store from 12:00 on Tuesday, April 30th. Purchases on the official web store and shipments to beer bars, restaurants, and liquor stores nationwide will begin sequentially from Wednesday, May 1st .
Additionally, a double tap takeover will be held where you can enjoy the collaboration beer of both companies at Totopia Brewery's directly managed store , BEER PUB BRICK LANE , in Nagoya, Aichi Prefecture on Saturday, May 11th, and at Mikkeller Kiosk Bar in Shibuya, Tokyo on Sunday, May 19th .

A cross-collaboration product between Totopia Brewery and Off Trail.
The base Sour IPA's grain and hop composition is truly hazy. From their wide variety of barrel sours, they blended in their "Spiced Rye Sour," which is aged for 12 months using aged hops, orange peel, and star anise. The hops are dry-hopped with Citra and Nectaron Cryo, bringing out their presence. The hops, each with their own distinct characteristics of pH, fruit, and barrel aroma, were carefully blended to create the final product. This collaboration with Off Trail has allowed us to express a new world of Sour IPA that Totopia could not have achieved on its own until now.
