Far Yeast Brewing “Yamanashi Support Project” #7: “Far Yeast Farm to Brew,” a fresh hop beer brewed with hops picked in the morning in Hokuto City, Yamanashi Prefecture, to go on sale on a limited basis from Saturday, September 18th

Far Yeast Brewing, which has been introducing beers with originality from Japan to the world, will release “Far Yeast Farm to Brew” using fresh hops from Hokuto City in Yamanashi Prefecture on Saturday, September 18. Far Yeast Farm to Brew” using fresh hops from Hokuto City, Yamanashi Prefecture, will go on sale on Saturday, September 18, and pre-orders will be accepted from 1:00 p.m. on Tuesday, August 31. Hops harvested in the morning from the fields at the height of summer are put into the brewing kettle on the same day. This is a special beer that can only be drunk at this time of year, with a focus on freshness.

■A new challenge of making fresh-hop beer, using hops picked in the morning  and brewed on the same day.

The seventh installment of the Yamanashi Support Project to enliven Yamanashi with beer is “Far Yeast Farm to Brew,” which uses fresh hops from Kobayashi Hop Farm, a hop grower in Hokuto City, Yamanashi Prefecture.

In some parts of the U.S., fresh hop beers are brewed during the hop harvest season, when the hops are harvested and brewed on the same day, due to the fact that hop fields are spread out near the brewery.

Since hops begin to deteriorate from the moment they are harvested, they are usually dried for long-term storage. However, since they are heated, some of the aroma components will inevitably volatilize. Even when fresh hops are used to make beer without the drying process, frozen hops are mostly used, as there are only a limited number of places in Japan where hops are grown nowadays, and they are frozen immediately after harvesting.

■Freshly picked hops from Kobayashi Hop Farm in Hokuto City, which is working to revitalize hop cultivation

Hokuto City in Yamanashi Prefecture, located at the southern foot of Mt. Yatsugatake, was the first place in Japan to start full-scale hop cultivation. Today, however, the number of hop farmers in the prefecture is on the decline. Mr. Yoshimichi Kobayashi of Kobayashi Hop Farm is working on hop cultivation to convey the appeal of hops and to revive and revitalize Hokuto City hops.

In late July, the brewery staff visited Mr. Kobayashi’s farm in Hokuto City early in the morning to help harvest 40kg of hops, which took about 4 hours. In the early afternoon, the fresh hops were brought to the Genryu Brewery where the brewing team was waiting in the shortest possible time, and in order to effectively extract the aroma components, the flowers were manually broken down one by one and put directly into the brewing kettle.

■ The Kölsch style which is aromatic and has a light body taste.

Far Yeast Farm to Brew is a Kölsch-style beer that is aromatic and easy to drink in order to simply enjoy the aroma and flavor of fresh hops.

To achieve a classic Kölsch style, we blended three types of malt: Pilsner Malt, Carapils Malt, and wheat. For the hops, we used a small amount of the German hop Merkur for the bittering, but other than that, all the hops are from Hokuto City. The two varieties used this time were “Sorachi Ace,” which has an aroma like cedar, cypress, and lemongrass, and “Sterling,” which has a refreshing bitterness with little stimulation. You can enjoy the fruity flavor of malt and hops in a refreshing and drinkable way.

Far Yeast Farm to Brew will go on sale to the general public on Saturday, September 18, and our online store will start accepting pre-orders from 13:00 on Tuesday, August 31. We will continue to work with producers and businesses in Yamanashi Prefecture to bring you a variety of “Made in Yamanashi” beers.

【About Yamanashi Support Project】

Far Yeast Brewing’s “Yamanashi Support Project” was launched in July 2020 with the hope of revitalizing local industry through brewing beer using products produced in the prefecture. In October of the same year, we relocated our headquarters from Shibuya to Kosuge Village in Yamanashi Prefecture, where our brewery is located, and further strengthened our ties with producers and businesses in the prefecture. So far, we have brewed “Peach Haze” using peaches from Yamanashi City, “Ume-kin’ Me Crazy!” using plums from Kosuge Village where the brewery is located, “GRAPEVINE” using grapes from Nirasaki City, and “Omoiro Tomato Ale” using tomatoes from Hokuto City. These beers, along with other brews, help to spread the appeal of Yamanashi throughout Japan.

The sixth edition of the Yamanashi Support Project, using beers to liven up Yamanashi. Far Yeast Peach Haze, with the aroma of freshly picked peaches, will be available for pre-order on August 17 (Tue).

Far Yeast Brewing that has been introducing beers full of originality from Japan to the world, will brew a limited edition, Far Yeast Peach Haze using peaches from the peach farm “Peach Senka Yamashita” (Yamanashi City, Yamanashi Prefecture) in Yamanashi City, Yamanashi Prefecture, as the sixth edition of its “Yamanashi Support Project” to cheer up Yamanashi with beer. The beer will go on sale to the general public on Friday, August 27, 2021, and will be available for pre-order on the online store from 13:00 on Tuesday, August 17.

■Peach Haze,” which sold out last year very quickly, is back again!

The Yamanashi Support Project was launched in July 2020 with the aim of revitalizing local industries through the brewing of beer using products harvested in Yamanashi prefecture. In October, the company moved its headquarters from Shibuya to Kosuge Village in Yamanashi Prefecture, where the brewery is located, and has further strengthened its ties with producers and businesses in the prefecture. Far Yeast Brewing has released five beers as Yamanashi Support Project so far, including “Ume-kin’ Me Crazy!” using Ume harvested in Kosuge village, “GRAPEVINE” using grapes harvested in Nirasaki city, and “Omoiro Tomato Ale” using tomatoes harvested in Hokuto city.  Peach Haze is the sixth release in the series.

We brew Far Yeast Peach Haze as the sixth beer in the project. Far Yeast Peach Haze was brewed last year as the first edition in this project. Last year, Peach Haze was sold out immediately after pre-ordering open,so we had to rush out an additional brew.

■Peach Senka Yamashita’s peaches are used in abundance.

Following last year’s “Peach Haze” and the “Peach Flower Weiß” released in May this year, we are using peaches from “Peach Senka Yamashita”, a peach farmer who runs the popular cafe “Peach Farmer Cafe La Pesca” in Yamanashi City. We’re using peaches which cannot be sold on the market because of the difficulty in appearance.

The farm of “Peach Senka Yamashita” is located on the southern slope overlooking the Kofu Basin, in a perfect environment where it receives plenty of sunshine. This year, we used the Hakuho variety, which is representative of Yamanashi. It is a popular variety characterized by its low fiber content and freshness with plenty of juice.

The introduction of a press that can squeeze the juice out of the peaches has improved our work efficiency, and we were able to prepare two batches at once using a total of 1000 kg of peaches.

■The evolved recipe makes it possible to enjoy the texture of freshly picked peaches even more.

Far Yeast Peach Haze is a Hazy-style fruit pale ale made with an abundance of freshly picked peaches. The aroma of the peaches is enhanced by the use of two types of hops: El Dorado, which has a stone fruit aroma, and Mosaic, which has a tropical aroma.

Last year, we froze the harvested peaches once to destroy the fibers before pureeing them, but this year, we processed the freshly picked peaches directly into juice because they are a low-fiber variety. The juice was added twice, once during brewing and once at the end of fermentation, so that the peaches would be well integrated into the beer and the juiciness and thick mouthfeel of the fresh peaches, as well as the natural peach aroma, would be maximized. We used less oats than last year, which are often used in Hazy IPA to thicken and cloud the beer, so you can enjoy the natural mouthfeel of the peaches more.

When chilled, it has a refreshing peach cider-like flavor, and as the temperature rises, the aroma opens up and the sweet aroma spreads.

Far Yeast Peach Haze will go on sale to the general public on Friday, August 27th, and our online store will start accepting pre-orders from 13:00 on Tuesday, August 17th.

We will continue to collaborate with producers and businesses in Yamanashi Prefecture to bring you a variety of “Made in Yamanashi” beers.

Full of tropical flavors “Passion Haze”, brewed with used pesticide-free, off-spec passion fruit from Okinawa. Limited release from August 6 (Fri.)

Craft beer maker Far Yeast Brewing Co., Ltd. (Headquarters: Kosuge Village, Yamanashi Prefecture, Representative Director: Shiro Yamada) that has been introducing beers full of originality from Japan to the world, will release “Passion Haze”, a limited-edition beer made from pesticide-free passion fruit grown in Okinawa Prefecture, on Friday, August 6.

“Passion Haze” is a Hazy IPA*1 with passion fruit aromas and tropical fruits such as pineapple, mango, and coconut, as well as citrus flavors. The tropical aroma is complemented by the tartness of the passion fruit for a refreshing aftertaste.

*1 What is a Hazy IPA?  Hazy IPA is a style defined as “Juicy or Hazy India Pale Ale” in the Beer Style Guidelines by the U.S. Brewers Association. As the style name suggests, it focuses on bringing out the “juicy flavors” of the hops and is characterized by a cloudy appearance. Although it is a new beer style defined in 2018, it is popular among craft beer fans and is one of today’s most notable styles.

“Passion Haze” was born out of a connection with Akemi Chinen of Akemi Farm, which takes pesticide-free cultivation seriously and farming passion fruit in Okinawa. In response to Ms. Chinen’s wish “through craft beer as an opportunity to introduce the passion fruit to people in Japan,”  we came up with an idea to brew a beer with passion fruit.  And, we aimed to convey the charm of the passion fruit with its gorgeous aroma and sweet-sour taste.

The passion fruits we used were delivered directly from the farm to our brewery, and after that, we carefully processed them all by hand and used plenty of them for brewing. With the tropical and juicy aroma in mind, we used three hops, Citra, Azacca, and Sabro, to create a Hazy IPA with the rich tropical aroma and sour taste of passion fruit.

Our head office and brewery are located in Kosuge Village, Yamanashi Prefecture, well known as one of the largest Fruit-Producing prefectures in Japan. We are now focusing on brewing fruit beer. With respect to terroir, we are now putting effort into using fruits for our beer brewing.  Under the “Yamanashi Support Project” launched in 2020, we are brewing beer using fruits from Yamanashi Prefecture, such as peaches and grapes. Off Trail, a brand that uses a barrel-aging method to brew beer using microorganisms other than ordinary beer yeast, also produces beers with unique flavors blended with seasonal fruits such as mango, plum, and persimmon. We plan to continue delivering a variety of fruit beers that take advantage of regional characteristics.

The 4th NIGHT WATCH PROJECT, Dessert-like Hazy IPA again! “Strawberry Milkshake IPA” “Pudding Hazy IPA” will be released on Thursday, July 29th, at the same time

Craft beer maker Far Yeast Brewing Co., Ltd. (Headquarters: Kosuge Village, Yamanashi Prefecture, Representative Director: Shiro Yamada) that has been introducing beers full of originality from Japan to the world, will release the 4th “NIGHT WATCH PROJECT,” on Thursday, July 29th. The fourth installment is a combination of “Strawberry Milkshake IPA” and “Pudding Hazy IPA.”

The “NIGHT WATCH PROJECT” is a unique concept project launched at the end of 2019 by a group of beer lover professionals from various business fields such as fashion, graphic design, architecture, and beer brewing.  Following the second project, “Hotcake Hazy IPA” and “Marron Milk Shake IPA” plus the third “Peach Milk Parfait,” the fourth project is two kinds of new sensation dessert-like beer “Hazy IPA*1.”

It is sometimes referred to as New England IPA (NEIPA) or “Milkshake IPA.”

We used three types of citrusy hops for the base beer, mainly Cascade, Citra, and Comet. For dry-hopping, for the first time, we used French Barbe Rouge, which offers ripe red fruit flavors of currant, strawberry, and raspberry, and the addition of lactose gives the beer a milkshake-like tart mouthfeel. We further arranged this base beer in two different ways to complete two unique Hazy IPAs.

『Strawberry Milkshake IPA』

Since the base beer has a good enough hop-derived strawberry aroma, we aimed to reproduce the natural strawberry flavor with minimal fragrance. In addition, we used Hibiscus to give the beer a pink color and floral scent. Our Milk Shake IPA gives you aromas and flavors like the cute strawberries on the label design.

『Pudding Hazy IPA』

Pudding Hazy IPA is a dessert-like beer inspired by the “pastry beer “*2 popular in the U.S.

Contrary to the aroma reminiscent of sweet pudding that makes you feel excited before drinking, the flavor is caramel with moderate bitterness. The sweetness is mild, and it is drinkable and with a good aftertaste.

*2 What is a “pastry beer”?

A generic term for beers with a rich, sweet, pastry-like flavor.

Strawberry Milkshake IPA” and “Pudding Hazy IPA” will go on sale in Japan nationwide on Thursday, July 29th, and the online store will start the pre-order sale at 13:00 on Tuesday, July 6th (The delivery will begin on Friday, July 16th).

The first time collaboration with Nara Brewing Co.! Using lime, refreshing perfect beer for summer, Silk Road ~Hazy Sour Ale~ Limited release from Saturday, July 10th.

Far Yeast Brewing Co. (Head office: Kosuge, Yamanashi Prefecture; Representative Director: Shiro Yamada), a craft beer brewery that brings beer brimming with originality from Japan to the world will start selling its first collaboration beer “Silk Road ~Hazy Sour Ale~” with Nara Brewing Co. (Nara City, Nara; Representative Director: Yasunori Namioka) will be available from Saturday July 10.

Silk Road ~Hazy Sour Ale~ is a refreshing summer beer brewed with lime. The slightly woody aroma of the lime is combined with the pine and citrus notes of the hops to create a silky smooth Hazy Sour Ale.

We are pleased to announce our collaboration with Nara Brewery, one of the most popular breweries in Kansai. This is our first collaboration with Nara Brewery. The collaboration is to challenge the diversity of craft beer. In addition, we want to make Far Yeast Brewing’s beer available to craft beer fans not only in Yamanashi, where we are based, and the Tokyo and Kanto suburbs, but also in the Kansai region.

We have developed the recipe for Silk Road ~Hazy Sour Ale~ by bringing together the experience and knowledge of Nara Brewing and ours in each respective field of expertise. Nara Brewing has experience brewing beer with lime and using PhillySour yeast, and we do brewing hop-forward beers, sour beers, and using aged hops.

This time, we paid particular attention to yeast. We used Philly Sour yeast, a new yeast product that both companies have been focusing on recently. Taking advantage of its ability to perform lactic acid fermentation and alcoholic fermentation simultaneously, we used the yeast to fulfill all primary fermentation to bring out the sourness. In addition, we focused on the farnesene* of the Willamette hop because of its hop-resistant yeast characteristics and emphasized the woody aroma derived from the hop. This beer is a complex combination of refreshing lime aroma, sour ale flavor, and rich hop flavor like Juicy IPA. It is a product that challenges the creation of a new aroma.

*What is farnesene?

It is one of the components in hop oil that brings a woody, herbal, and citrus aroma.

The name comes from the idea of “connecting the east and west of Japan with the beer” and the silky smoothness of this beer, just like the Silk Road, a historical trade route connecting the East and the West. The label was designed by Genki Kubo, who also creates labels for Nara Brewery’s products.  The label design by Genki Kubo, the label designer for Nara Brewing, softly expresses the freshness of experiencing a new alcoholic beverage, Hazy Sour, with a slightly surreal and mysterious world view.

To meet many craft beer fans in the Kanto and Kansai regions and enjoy our various beer flavors, Nara Brewery will be releasing another collaboration product in August.

Silk Road ~Hazy Sour Ale~ will go on sale on Saturday, July 10.
