■Fruit puree makes barrel-aged beer funky at its best
The process used in this project is a commonly used method of sour ale + fruit + dry hops, but we found the Off Trail character in it. Our goal was to create a sour, funky barrel-aged beer with a psychedelic feel with a swirl of complexity that is enhanced by the fruit and hop elements.
We blended a 23-month aged Sour Blonde Ale, which is clothed in complexity, an 11-month aged Spiced Rye Sour Ale soaked in orange peel and star anise, and a Wheat Strong Ale that balances the overall body of the beer. The fruit was pureed with pink guava and peach and dry hopped with Citra and Nectarone hops for a citrus and tropical character. Yeast, which Totopia Brewery says they always use, was added to the beer with the fruit puree. The result is a complex combination of funkiness and sourness with the tropical character of the puree, and is close to the psychedelic image we were aiming for.
Totopia Brewery also blended a spiced rye sour ale that had been aging on the Off Trail side of the brewery, “Funkphilia“,on the same day .Funkphilia” will be released on the same day.
