Far Yeast Brewing will release Far Yeast Hop Frontier New England IPA as a limited special version of its new standard beer Far Yeast Hop Frontier Juicy IPA (Far Yeast Hop Frontier Juicy IPA, hereafter “Hop Frontier”). Frontier -New England IPA-, a limited special version of the new standard beer Far Yeast Hop Frontier -Juicy IPA-, will be released on February 1, 2022 (Tuesday).

◾️Hop Frontier, a scientific approach to maximizing hop aroma

Hop Frontier, which was one of the first beers in Japan to implement the latest hop theory and advanced brewing methods, uses a scientific approach to maximize hop aroma components.Focusing on Survivables, ingredients that are not lost through the brewing process and that are said to have a high aromatic impact in the finished beer, we have explored brewing methods that effectively extract these aromatic ingredients and are taking on the challenge of maximizing the aroma of hops.

◾️Emphasis on sweetness and mouthfeel while maintaining intense aroma

As a limited edition of “Hop Frontier,” we released Far Yeast Hop Frontier New World IPA using Oceania hops in December 2021.

For this second release, “Far Yeast Hop Frontier New England IPA, we focused on the beer yeast. We used a yeast that is less fermented than the original “Hop Frontier” to emphasize the sweetness. The alcohol content has been increased, so the body from the malt can be felt clearly.It is an experimental limited edition beer that emphasizes sweetness and mouthfeel compared to the dry original, while maintaining the concept of Hop Frontier, which is full of fruity and tropical aromas. When compared to the original, the difference in taste due to the yeast can be enjoyed.

Far Yeast Brewing collaborates with Granny Smith, an apple pie specialty store! Limited release of “NIGHT WATCH PROJECT #9 Apple Pie Hazy IPA” on February 1st (Tuesday), just like drinking apple pie!

Far Yeast Brewing Co., Ltd. will release “NIGHT WATCH PROJECT #9 Apple Pie Hazy IPA” (hereinafter referred to as “Apple Pie Hazy IPA”) as the ninth installment of the “NIGHT WATCH PROJECT” in collaboration with “Granny Smith Apple Pie & Coffee” (hereinafter referred to as “Granny Smith”), an apple pie specialty store operated by Fungo Co. #(hereinafter referred to as “Granny Smith”), an apple pie specialty store operated by Fango Co.

The “NIGHT WATCH PROJECT” is the project launched at the end of 2019 by a group of professionals in various fields who love craft beer, including brewers, fashion, graphic and architectural designers.

This is the ninth installment of the project, a collaboration with Granny Smith’s, an apple pie specialty store, to create a pastry beer*1 inspired by drinking apple pie.

Based on Milkshake IPA*2, which is very popular among craft beer fans, this beer contains the largest amount of lactose in the history of the “NIGHT WATCH PROJECT”. In addition, a generous 121.5kg of concentrated apple juice is used to create a robust sweet and sour taste.

The use of kveik yeast, which is characterized by its tropical aroma, gives it a fruity feel, while the malt structure gives it a pie crust feel, and the fruit juice and cinnamon give it an apple pie flavor. We aimed for the taste of Granny Smith’s apple pie, which is a crispy pie filled with large apples.

 Hokuto City in Yamanashi Prefecture is suitable for hop cultivation due to its cool climate and solar radiation, which is the highest in Japan. It was the first town in Japan to start contract hop cultivation in earnest. However, the number of hop growers has been decreasing recently.

 Mr. Kobayashi, a hop farmer in Hokuto City, aims to convey the appeal of hops, revitalize Hokuto City hop cultivation, and raise awareness.

Currently, he supplies hops to many craft breweries in Japan. This summer, Far Yeast Brewing brewed the Yamanashi support project “Far Yeast Farm to Brew” with fresh hops from the Kobayashi Hop Farm.

 “Hokuto no Hana Hops” is a beer produced and sold by Mr Kobayashi to bring hops appeal to as many people as possible. It is brewed by Far Yeast Brewing using only hops grown at the Kobayashi Hop Farm and was sold in limited quantities last year to great acclaim. The beer was sold in limited quantities last year and was very well received, so Far Yeast Brewing has decided to brew and sell it again this year.

Usually, several kinds of hops are used in beer. But for “Hokuto no Hana Hops,” for emphasizing the natural aroma and characteristics of freshly picked hops, we brewed it with only one type of hop, Cascade. By adding hops at different times during the boiling process, we extracted and layered the various flavors of the Cascade hops, resulting in a finished product with a depth of flavor that you can enjoy.

(Headquarters: Kosuge Village, Yamanashi Prefecture, Representative Director: Shiro Yamada) that has been introducing beers full of originality from Japan to the world had a collaboration with Ise Kadoya Brewery.  As the collaboration product, Far Yeast Brewing will release the Off Trail #19, “Shoyu the Way” a beer aged in wooden soy sauce barrels, in collaboration with Ise Kadoya Brewery, which is produced and sold by Niken Chaya Mochi Kadoya Honten Co., Ltd.(Head office: Ise City, Mie Prefecture; President: Narimune Suzuki), on Thursday, December 23, 2021.

■Collaboration with Ise Kakuya Brewery, which has been in business since 1923 and has a tradition of making soy sauce

 

 “Off Trail” started in November 2019 as the third brand following “Kawa KAGUA” and “Far Yeast”. Utilizing microorganisms other than brewer’s yeast, we use a barrel-aging method that matures in wooden barrels to create a unique beer with a rich and complex taste. “Off Trail # 19 Shoyu the Way”, which will be released as a new work of “Off Trail”, is a barrel-aged beer that has been aged in barrels brewed with soy sauce that is unprecedented in the past. This new attempt was realized by taking over the traditional wooden soy sauce barrel used for soy sauce preparation from Ise Kadoya Brewery, which has had a history of brewing miso soy sauce since 1918. So far, we have made various barrel-aged beers using wine barrels and whiskey barrels, but aging using soy sauce barrels is our first attempt. It was an adventurous beer experiment as if pushing yourself a way through the trackless mountain, Off Trail.

■A unique “soy sauce barrel-aged beer” full of “umami” flavor.

 When the spiced sour porter was aged in soy sauce barrels, it produced a beer with the most robust added flavor we have ever tasted, as fast as 38 days after being placed in the barrel. After that, a balanced blending of sour red ale and barrel-aged porter resulted in a beer that smells like freshly cut cedarwood and cabernet sauvignon. The aroma is reminiscent of dashi, soy sauce, and dark malt were followed. In addition, a hint of acidity, mild earthiness, a touch of bourbon, and a hint of vanilla appear, leading to a smooth and pleasant finish. The tannins from the wood barrels bring balance to the acidity and flavor of the beer. As a result, we created in a uniquely elegant and mysterious beer full of “umami.”

The company was founded in 1575 next to a boat landing for Ise Jingu, one of the three major shrines in Japan, as a rice cake shop called Nikenjaya Mochi, which catered to worshippers.
