 Far Yeast Brewing (Head Office: Kosuge-mura, Yamanashi Prefecture; Managing Director: Shiro Yamada; hereinafter referred to as “Far Yeast”), offering a wide variety of original beers from Japan to the world, has collaborated with BIRA 91, an Indian brewery. Far Yeast brewed “Pink Salt & Yuzu Gose” at its Tokyo Brewery in Gotanda, Tokyo. The beer will be available from Saturday, May 28, 2022 exclusively at Far Yeast Tokyo Brewery & Grill, a directly managed restaurant equipped with the brewery. 

 

■To celebrate the 70th anniversary of the establishment of diplomatic relations between Japan and India, a cultural exchange was held with recipes using specialties from each country: “Yuzu” and “Himalayan Pink Salt”.

In 2022, Japan and India will celebrate the 70th anniversary of the establishment of diplomatic relations. In this milestone year, we collaborated with BIRA 91, an Indian brewery to create “Pink Salt & Yuzu Gose”,  a gose made with Japanese yuzu and Indian Himalayan pink salt. Gose is typically a sour and salty beer style brewed via lactic acid fermentation with the additions of salt and coriander.

This time, Far Yeast Brewing’s Tokyo brewery and BIRA 91’s Bangalore brewery will brew the same recipe of Gose at the same time. In addition, the chefs of both restaurants will exchange their own pairing menus, which will be served at their own restaurants. This will be an exchange program to introduce the culture and breweries of each other’s country. This is our first time collaborating with an Indian brewery and vice versa, the first time for BIRA 91 to collaborate with a Japanese brewery.

This collaboration is recognized by the Secretariat of the Japan-India Diplomatic Relations 70th Anniversary Executive Committee (Embassy of Japan in India) as part of the Japan-India Diplomatic Relations 70th Anniversary Program.

■Gose style, the first challenge for Tokyo Brewery

From Japan, we used Yuzu, which is used in our regular beer KAGUA, and from India, we incorporated Himalayan pink salt, a representative Indian rock salt, into the recipe. Using ingredients representative of both countries, we have created a refreshing Gose perfect for early summer with its aroma of yuzu and juicy, pleasant acidity.

 Far Yeast Tokyo Brewery & Grill will offer this “Pink Salt & Yuzu Gose” along with a pairing menu created by the chefs at BIRA 91’s taproom for a limited time, from Saturday, May 28 to Friday, June 3. In addition, BIRA 91’s taproom in Bangalore will serve “Yuzu and Black Shichimi Fried Chicken” using yuzu, which will also be a regular menu item at Far Yeast Tokyo Brewery & Grill.

 Craft beer brewery Far Yeast Brewing Co., Ltd. (Headquarters: Kosuge Village, Yamanashi Prefecture, Representative Director: Shiro Yamada) that has been introducing beers full of originality from Japan to the world, has decided to make Far Yeast Peach Haze, a seasonal product made with peaches from peach farmer Peach Senka Yamashita (Yamanashi City, Yamanashi Prefecture; Representative Director: Kazuhiro Yamashita) as a seasonal standard product every spring and summer on an ongoing basis. This year’s product is scheduled to go on sale on Wednesday, June 1, and we have started brewing.

■Peach Haze, a popular product that has sold out in pre-orders for the past two production runs, will become a regular product every year for the spring and summer seasons.

In July 2020, Far Yeast Brewing brewed “Peach Haze” for the first time, using “Peach Senka Yamashita” peaches.

The limited release was the first product of the “Yamanashi Support Project,” which cooperated with local producers. It was a countermeasure for the decline in tourists to Yamanashi Prefecture due to the COVID-19 impact. We used beer to communicate the attractions of Yamanashi, and the product became a hot topic among craft beer fans. Due to the product’s popularity, it was re-brewed last year in 2021 too. We introduced a new squeezer system that could process the juice thoroughly, improving the work efficiency, so we used approximately 1,000 kg of peaches to make twice as much as the previous year. However, it was still sold out very quickly by reservation as last year.

This year will be the third year since we started selling the product, and we have decided to sell it at an early stage and have begun brewing. From now on, “Peach Haze” will be positioned as a seasonal staple product for spring and summer, and by brewing it every year, we aim to attract and establish a hard-core fan base. We also plan to sell a new product made with freshly harvested peaches in August this year. We are strengthening our production system to meet the demands of our fans and are preparing to deliver our products to a large number of peach beer fans.

■Utilizing Peach Specialty Yamashita’s outside-of-specification peach. 

Peach Haze is a Hazy style fruit pale ale made with plenty of peaches from Peach Senka Yamashita, a peach farmer in Yamanashi City. Peach Haze utilizes outside-of-specification peaches that cannot be sold on the general market due to their poor appearance.

Peach Senka Yamashita focuses on sixth industrialization, processing outside-of-specification peaches into juice and gelato for sale. This time, 1,000 kg of peaches harvested in 2021 and frozen for processing will be used to make 6,000 L of “Peach Haze.”

The Peach Haze to be brewed this time is scheduled to go on sale to the general public on Wednesday, June 1, with orders for wholesalers starting on Monday, April 25. This year, Peach Haze will also be served at the Peach Farmer Cafe La Pesca, which is operated on the premises of Peach Senka Yamashita, from mid-June. Recurring Dreams” will go on sale to the market on Saturday, April 23, with pre-sales starting on Tuesday, April 19 at 1:00 p.m. on the official online store.

 ”Off Trail Hops and Dreams,” released in August 2021, was Untappd’s most popular beer among the Off Trail series released last year. “Off Trail Recurring Dreams,” like last year’s “Off Trail Hops and Dreams,” is a dry-hopped, barrel-aged blonde sour ale with various hops. 

Even the same dream you repeatedly have may seem similar to a previous dream, but it is somehow slightly different. Like the dreams, the Hops and Dreams brewed this time is a reproduction of last year’s Hops and Dreams, but with a somewhat different flavor and aroma due to the hops and base beer used.

 

■ Sour and fruity taste like fruit juice

 This time, we used several aged beers in the blend, with the longest aged beer being a beer that has been aged in wooden barrels for about two and a half years. To complement the acidity and create a complex flavor, we dry-hopped this time with Vie Secret and Galaxy, Australian hops with tropical and citrus characters.

The body is light and dry, and the finish is crisp and a bit funky. Overall, it has a well-balanced acidity, with pineapple-like and passion fruit-like flavors, as if you are drinking fruit juice. The fruity flavor was created by the power of the base beer and hops alone, without the addition of any secondary ingredients.

First Umeshu (plum wine) from “Azeotrope,” a crossover brand of beer and spirits

 ”Off Trail-Azeotrope,” launched in October 2021, is a crossover brand of beer and spirits that challenges innovative spirit and liqueur making by utilizing the know-how of fermentation and barrel aging cultivated in beer making.

 The new product is the brand’s first plum liqueur made from the distilled spirit of Far Yeast Brewing’s regular beer “馨和 KAGUA” and pickled plums from Kosuge Village in Yamanashi Prefecture.

We carefully distilled “馨和 KAGUA” twice in pot stills at the Braeckman distillery in Belgium over 100 years. Then, we transported the “馨和 KAGUA” origin spirits to Far Yeast Brewing’s Headwaters Brewery in Kosuge Village, Yamanashi Prefecture, then aged these spirits for nine months in French oak wine barrels that a winery donated in Yamanashi Prefecture. Then, we soaked Kosuge Village plums in the barrel-aged spirits. 

 

■Locally produced and locally consumed products utilizing ume plums grown locally in Kosuge Village, Yamanashi Prefecture

 Far Yeast Brewing, which had a brewery in Kosuge Village, Yamanashi Prefecture, moved its headquarters functions to Kosuge Village in 2020. The company is actively working to strengthen cooperation with agricultural producers in Yamanashi Prefecture and other businesses to brew beer using agricultural products from Yamanashi prefecture.

The plums used in this new project were provided by Genryu Mirai, an agricultural NPO that manages plum groves that have become difficult to care for due to the aging of the farmers.

Genryu Mirai is working to revitalize the headwaters of the Tama River and the Kosuge River area, and in 2021, with the cooperation of Genryu Mirai, we brewed a beer using plums and blueberries grown in Kosuge Village at Off Trail 

Under the theme of “local production for local consumption,” we have taken on the challenge of making ume (plum) wine as a product that tastes the terroir of the local Kosuge Village.

 

■Plum wine with a rich aroma unique to barrel-aged for adults. 

 The plum wine is made by soaking plums that have been fully ripened after harvesting to maximize the aroma. The fresh plum flavor with an intense sourness is harmonized with the woody aroma from the wooden barrels, creating a deep and mature taste.

 It can be enjoyed in your favorite way, straight, on the rocks, or with soda, but the plum and woody aroma is more decadent when drunk straight. Twice-up is also recommended.

(Headquarters: Kosuge Village, Yamanashi Prefecture, Representative Director: Shiro Yamada) that has been introducing beers full of originality from Japan to the world, announced the general release of a collaboration beer Far Yeast DOBUROKU Wheat Ale with WAKAZE Corporation, which has its head office in Tsuruoka City, Yamagata Prefecture, and Representative Director Takuma Inagawa, who operates the Craft Sake Brewery named Sangenjaya Brewery in Setagaya-ku, Tokyo. Far Yeast DOBUROKU Wheat Ale, a doburoku-inspired wheat ale, will be released on Saturday, March 26, 2022.

■The second collaboration with WAKAZE, a craft SAKE brewer

 This beer will be the first mutual collaboration brew with WAKAZE, which produces a wide variety of SAKE to realize “Changing Sake to a global drink!”

The first collaboration will be Far Yeast Brewing providing the technology to brew Sancha Sumi Sake Anko Stout at WAKAZE Sangenjaya Brewery as a SAKE that incorporates stout, a beer style, in its conception and has released by WAKAZE on February 16, 2022.

For the second collaboration, Far Yeast Brewing brewed a SAKE-style beer at its head brewery using the same white Kouji; malted rice,  used in WAKAZE.

 This genre-defying collaboration between sake and beer will deliver even more diversity and freedom in the appeal of alcoholic beverages.


■Smooth mouthfeel and refreshing ginjo aroma produced by Sake yeast

 It was brewed using “Tsuyahime (rice)” and “Shiro Koji” used at WAKAZE as ingredients. Our brewer has long wanted to brew a beer using koji. This collaboration has resulted in a wheat ale reminiscent of doburoku, one of WAKAZE’s most distinctive products.

 The malt used is a high percentage of wheat, giving it a smooth mouthfeel. Unlike the Hazy IPA style beers currently popular in the craft beer scene, which emphasize the hop aroma upfront, this wheat ale has a refreshing aroma that blends the gentle ginjo aroma of SAKE with the flavor of wheat. 

 

 Far Yeast DOBUROKU Wheat Ale will go on sale to the public on Saturday, March 26, and be available for pre-sale on the online store from Tuesday, March 22. In April, to commemorate the collaboration with WAKAZE, “Sancha Sumi Sake Anko Stout” and “Far Yeast DOBUROKU Wheat Ale” will be available at WAKAZE TOKYO, WAKAZE’s directly managed interactive restaurant, and Far Yeast Tokyo Brewery & Grill, Far Yeast Brewing’s direct operated restaurant.
